I’d add spinach to the sandwiches and eggs. I’d also add the extra cheese and ham to the eggs. I hate peas so I would probably trade them in for another veg like cucumber or carrots or an onion or a potato. These challenges always seem so doable from the comfort of my couch, but I don’t know if I could stick to such a low grocery budget. Thank you for trying. I love these videos. For the pasta, aldi sells precooked real bacon bits in small bags for $1.49. (as of March 13, 2022) and it's delicious. I hate fake bacon bits, so this is real bacon. It gives amazing flavor to the sauce too.
I used the "real bacon bits" for things like this. It is cheaper than bacon. I also use the bagel skinny with cream cheese and bacon bits - I toast it in the toaster oven for 3 mins. It's excellent.
The French toast would be delicious using the cinnamon raisin toast. My grandson loves it. Also, just as another option, you could have fried and used some of the extra ham in the pasta with the peas and used the spinach with your sandwich. Then you would have the sausage that you could have made maybe with a potato if you could find the money in the budget to grab one or two
I can see how this will feed one person for a week, but it will be a stretch for a family. In hard times, you have to get creative. I really enjoy these videos and thanks for sharing😊😊
Love Ragina D's ideas. I enjoy getting creative with simple ingredients and making "mix and match" meal option. For instance, you could switch up breakfast or lunch and make a ham and egg sandwich with or without cheese. Scrambled eggs with some chopped spinach added tastes amazing. Another idea is to make mini pizzas on the bagel/bun using any combo of cut up cold meat (ham, salami and/or pepperoni work well or even some diced sausage), a slice of cheese, spinach and pineapple pieces. Some of the carbonara/white sauce you made would work for the base sauce, or use BBQ sauce, some leftover marinara/pasta sauce, etc. if you happen to have something in your home. Going sauceless is fine as well. Some of the pasta, chopped spinach and peas could be made into a nice pasta salad with a simple homemade dressing, such as herbs and oil or mayo. Pair it with a bit of sausage or add in sliced up cold meat pieces for a complete meal. A spinach salad topped with a sliced boiled egg or with sliced up cold meat and a simple homemade dressing is also an option.
