I think a bag of rice would have been a great addition to your haul with the left over .95. The first dish could have either bulked up the pepper filling, and you would have been able to save some the sausage for your potato soup. Used it as a side with the second dinner of chicken and veggies, since that one didn't look like a very big or filling. Also could have saved the veggies scraps and made a broth to make another soup with rice and chopped the veggies smaller to use in this as well. Great job getting 5 dinners out of your $19!
Ive never used sausage in a stuffed green pepper, I have used hot sausage in a jalapeno but thats a different story.. Im going to have to try it. Ive always uses rice because thats what mom and gma used but the past few years Ive just been making stuffed pepper stoup, thicker than soup but not really a stew.. I'll probably add some onion and jalapeno to the diced pepper and use this mix in a tortilla or eat it with tortilla chips... Nice twist! that dinner looked INCREDIBLE... season the pasta water... adds a TON of salt... Im on a low sodium diet, for me seasoning is garlic and onion powder, maybe italian seasoning or home made taco or cajun seasoning, maybe some herbox chicken or beef no sodium bullion.. the pasta sald also looks very tempting
These are fun challenges. I'm greek and our stuffed peppers are meat and rice. Try adding rice to your meat and it really stretches the meal. We tend to fill our vegetables and then bake the remaining filling as extra. ❤

I'm honestly learning sooo much on how to be more creative with my cooking. I learned esp to first check what's in my cabinets, before I just go out and buy what I want and/or need. The other day, I took a package of Lipton Noodle Soup, added a chopped potato (leftover from previous meal) and chicken (also leftover from previous meal) added some seasoning and it didn't just bulk it up, BUT it was really yummy and very filling. In stuffed peppers my mom would always what she called psrboil the pepper for about 20 min. I always made mine un slow cooker soud skip oar boiling, esp.if your over heats the enture house, no thanks on hot days.
Since you said the Pasta Primavera wasn’t the greatest, I checked to see if Rachael Ray had a version of it. I combined your recipe with hers and served it with garlic bread I had in the freezer. My husband’s comment? This is a keeper! ❤
Loved this, great recipes and not your norm beans and rice. Tbh though, I don’t think most households have butter - it’s not cheap at all. Growing up, we lived on an extreme budget and It was margarine, all the way
Growing up we were mostly margarine, too. But my mom and I discussed it one day when I was a teenager and decided that margarine would continue to work on things like toast, pancakes (which we made from scratch), and in baked goods, but we would use the expensive butter as a flavoring for certain other foods like baked potato. It was a great compromise. That said, now that I have my own household, it’s butter all day, still used mainly as a flavoring.
Instead of stuffing my peppers I make a green pepper casserole by using the same ingredients, you don't need as many peppers this way. The ingredients sure goes a lot farther this way bc you can use a little more rice and it's still very good.

you had a red hot go of it. nice work. For me i think i would have used a couple of your potato's for the chicken n veg meal to bulk it out. it looked very bare and not filling. grating a litte zucchini could have given you some extra veg in the capsicums too.
Great meal ideas, however for the roasted potatoes I would have added 2-3 tablespoons of the italian dressing instead of the plain vegetable oil, in the pasta primavera I would have used up the 2 tenderloins you had left over....but thus gives me so many ideas, thank you!!!

Were all those veggies pre-washed? Gotta be sure to at least rinse/rub things like carrots, zucchini’s and bell peers to get the fly or bug larva off. Actually carrots and potatoes usually need to be scrubbed under the faucet w water then peeled. It’s a pain but worth it. Keep up the great work, I love these kinds of videos. ❤️

You could also use lentils and rice instead of sausage in your stuffed peppers ( if you wanted to really stretch the budget )

My cutting board was actually hand made for me by my husband!
With the potato soup... you may have been able to buy a can of evaporated milk to stay in your 20 budget. Just a thought.
