  • I have a hard time waiting for fresh vegetables to come in from the garden. There is nothing any better. A meal with all vegetables is sometimes all we need. Get us a plate of fresh cooked veggies, a hot, buttered dinner roll, sliced tomatoes, and big glass of sweet tea. I hope you enjoy this video. It is my first summer vegetable meal of the year.

    My maternal grandmother lived with us for a decade or so. In the summer , 🌞 nice or twice ,we'd have a good veggie dinner if fried green tomatoes, corn fritters and fresh picked green beans yummmmm

    Karen, you make me think of me & my husband. He loved his fried okra. I believe he could eat them everyday. He passed away 4 yrs. ago , but I still think about him everyday Just like when you had your chat video & your husband was with you. We were married 53 yrs. when he passed away.

    Hi from SC. I came upon your videos yesterday, I enjoyed watching & listening to you. You cook like my mom & dad taught me. I remember when I was young my mother would say, "Everyone get your meat at lunch cause tonight is all vegetable dinner." I loved it. It taught me to eat my veggies, I can hardly wait for the summer harvest every year. Fresh skillet corn, fried okra, beans, cabbage, & fresh tomatoes, & cucumber salad.. Can't beat it. I still eat all my veggies today. Lol 😆🍅🍆🌽🍠

    What a delicious dinner. I call that a "Blue Plate Special" a vegetable plate without meat. This was often served by my mom back during WW11. Different veggies because we lived in Canada back then. I could tell by the look on hubby's face, he was really looking forward to eating this meal.     What a nice supper! So much variety, and I always thought you had to fry just a few pieces of okra at a time, I had no idea you put it all into the pan, then I saw it getting browned, 👏🏻so “that’s how it’s done” 👏🏻 I love your presentation of the food, it made me hungry! ❤️

    Just discovered your channel. We live in the south but we’re Yankees. I love southern cooking but not my husband. He only wants pasta, meat and potatoes or northern dishes in our house. But I do enjoy watching you. And your husband is a sweetheart. Cooking is a joy for someone who appreciates it.

    I love fresh fried corn. When I cut mine off the cobb I make three cuts. Just take the top off of the corn the first slice down the cob. Then make another pass cutting down the cobb, then the third pass scrape that cobb really good to get that cream style corn. Fry that down in bacon grease. This meal looks delicious. Right up my alley. The colors in your top really compliment your complexion. 🙏🏻🇺🇸🙏🏻

    I love that glass water bottle. When I was little, in the summer we spent a lot of time with my aunts and uncles who all had farms and I remember EVERYONE had a glass bottle like that , a little smaller maybe full of "Ice water"....You bring back so many great memories. All of the foods you prepare I grew up eating...I am having so much fun watching you. 🙂

    We grew up having "vegetable suppers" as we all got married mother would have us ALL over for her vegetable suppers. I sure miss that. Mine are just not like mothers.

    Love your veggie meal. Some of my favorite meals at my grandmother's house were summer vegetable suppers! Just a heads up, if you can find McKenzie's cream corn in the freezer section at the grocery store (it is in a roll sort of the size and shape of a roll of breakfast sausage, and the packaging looks like an ear of corn,) it tastes like it just came out of the garden and scraped off the cobb!

      I've used that corn product (I have one in the freezer now). It really is good & very similar to skillet fried corn without all the work.

    Supper looks yummy. I don't have to have meat either. Loves vegetables. I season with butter also. You gave me a great idea on fried corn. Never thought of frozen corn.corn bread would be great with supper.

    I had plenty of family from the south. My dad's favorite meal was pinto beans, cornbread w/buttermilk. He put his corn bread in buttermilk. With this fried okra in cornmeal. Flour would be odd. I love southern cooking.

    I keep a (new) toothbrush by my kitchen sink to clean food processor blades or anything sharp. I have cut myself so many times that I have learned. No matter how careful you are, those blades tend to slip on you and cut! Your veggie supper looks delicious!

    Hi Karen! I have been watching some cooking shows and your channel came up! I'm really enjoying it! I love the fact you measure as you go rather than having laid out it all in advance. I really miss a gas stove! When it's off, it's off! I pulled something in my shoulder and I can't do the food prep from the pain I'm experiencing. I'm cooking vicariously through you!       Thank you Kathy. I'm sorry about your injury. I'll keep you in my thoughts for quick healing. I have a garage right off my kitchen that has shelves, lots of cabinets, and countertops. I store out there. Easy to get to, doesn't clog up my kitchen. I don't use them everyday so I don't see a reason to stuff my kitchen with it. Thanks for watching. ❤️

    My kind of food I am going through chemo now and my last infusion is June 7th I have been sick from the chemo and have lost down to 136 lbs but thank God I am almost through I just found your channel and I love it

    Fun to see you cooking with Saladmaster. I have used it since 1971. Best purchase I ever made. I love the idea of okra and green tomatoes fried together, that's new for me. Love to watch you.

      I love the Saladmaster. My mother in law gave it to me several years ago when she gave up cooking. It cleans up beautifully and cooks perfectly.

      We bought a set of Saladmaster as a “splurge” (LOL - it was a steal, looking back) in early 70’s - one of the best purchases ever. Glad I found your channel!

    I’ve picked up several cooking tips from you. I was definitely doing things the hard way. And I just bought a pig tail to use.
    I was showing my husband your videos and told him that’s gonna be us one day at your age. Ha Ha! We are in our 50’s right now. I am from the Pensacola, Fl area, but we live in NC. Anyway, I really enjoy your videos. I wish I could hug your neck. Y’all are the sweetest couple.🤗

    Looks wonderful! There's so many vegetables I never got to try when I was young, either my parents didn't like them or my mom didn't know how to cook them. I know most moms are great cooks, at least that's what I'm told, but my mom was not one of them. I loved cafeteria food & school lunches. Moms idea of seasoning is salt and pepper and fried things were swimming in grease. Your husband seems like a very sweet guy (and handsome too!) Can't wait for our garden to start producing so we can have a veggie dinner too. Thanks for the tips and ideas!

      Thank you so much. I have to say my seasoning on good veggies is mostly just salt and pepper. Why cover up the taste of a good vegetable. But I do try not to be too heavy on the oil. Keep watching, I have a new veggie video coming soon. 😋

    Love your channel. Karen, please don't use plain water unless making a stock. Water has no favor. Start with either vegetable, chicken, beef or turkey stock/broth which will deepen the dish.

    I just found your channel and I just love it! While I’m not a Southern cook, I have been married and cooking for 38 years. I cook in a very similar fashion to you and am thoroughly enjoying watching.

    If you find you are getting too much potato with your peeling (or even if you aren’t!), try washing the potatoes really well before peeling, add a bit of oil and seasonings of your choice to the peels, and bake in a hot oven until they are as crispy as you like. You can also fry them if you choose. Quite yummy!
