Today is the first time that I have seen your video, I don’t know where you are coming from, but never in my life have I seen anyone who cooks , just like I do. I mean even putting okra in a pot of purple hull peas. And you make your dressing just like I do, even putting a little extra sage in. Unbelievable.I seen a few more of your recipes I will be watching. God bless you.

Ms. Karen, It's a joy to watch you from up here in Connecticut, and we get to see how our great southern states do their cooking and it's a joy for me to watch you. How long did you have to cook those cube steaks to make them fork tender? I'm guessing about an hour and a half @ 325?? Can you tell us what that "Pioneer Gravy" powder was? I've not seen that before, thank you ma'am. Gardis

You are right. The pioneer gravy is just a brown gravy powder. I like to use it to enhance flavors along with a little balsamic vinegar. Try adding some of your leftover morning coffee in place of the liquid. Yumm 😋

That meant tomatoes, cucumbers in vinegar, mashed potatoes, fried okra (which my daddy didn't care for but he would eat a little), cantaloupe and green beans (all from the local outdoor market). This video feels deeply familiar to me and rings of childhood and a simpler time. I’m from Texas but your Alabama accent sounds like my family…your cooking reminds me of summer when my grandmother’s garden would be coming in. She’d cook the most wonderful meals like this one. We were required as kids to shell the purple hills. Only difference…in the summer there would have been sliced cantelope and frosty iced tea. The tomatoes and cucumbers were usually in small cubes mixed together with vinegar, salt, and pepper. I remember my grandmother cooking this type of meal as a big lunch and leaving the serving dishes with the leftovers in the middle of the table covered with a cloth to be eaten for supper that night. Nobody died so I guess the immediate refrigeration we do now isn’t completely necessary. I just found your channel and love it. I subscribed and am looking forward to watching more of your videos. You are a talented cook.

I learnt from my Irish Grandma, and she learn from her husbands grandmother, so I'm assuming this recipe goes back to the 18th century. But the Irish way to cook a "crumble" is without oats, and with COLD butter. The secret is to end up with little balls of butter, flour and brown sugar, and they get super crispy on top of the biscuit crumble between the fruit. That happens by rubbing and scrunching them together in your hands. The smaller crumble will top the fruit and the bigger lumps will go on the top. Personally I'm always disappointed by the addition of oats. We do Apple, apricot, rubarb, peach, or combinations of these. so good. 😊

I’d love to try your Irish family recipe. Do you first mix the fruit with a biscuit mixture and last put cold butter-flour-brown sugar mixture on top of the fruit?🌷

My grandmother would cook Swiss Steak using a whole beef round steak ,about the thickness of cube steak, (that is the top and bottom round steak) with onion and a little bell pepper gravy. She put hers in the oven til tender. OMG, I can still smell and taste that meal, with mashed potatoes and a veg. WOW, I need to go to the store and get some steak, time for Swiss Steak 😋😋😋

I learned something new from you, I didn't know that leftover mashed potatoes work better than freshly cooked potatoes for potato patties, thank you for letting all of us know that!

Karen, thank you for you for this video. I have a question about the seasoning of the purple hull peas. You used butter. I use bacon, ham, or etc. to season any of my vegetables. What does the butter do to the peas? Make it have a buttery rich taste. Thank you for your response when you can.

Hi Mrs. Jones, boy did this bring back memories. I grew up on a farm in Arizona. My Daddy had a twin brother so it was my family, my uncle and his family, and my beloved Grammy. She would make those potato patties (they had to be from a day or two old mashed potatoes just like you). She would put a little bit of butter on top of each pattie. Yum! I have really been missing her and I think maybe.. I was supposed to find you:) Blessings, Pamela
