I add a free twigs of saffron to a bowl with 3 ice cubes then cover until the risotto is almost done then add at the end just like Chef. It brings out the color and flavor more. Beautiful
Fresh butter is white. Probably they make the butter them selfes or buy it from some manufacture where it is done fresh. The yellowish colour comes when its couple of days old. Also depends what the cows had to eat. Fresh gras -> more yellow (because of carotine). Dry Hay (eg. in winter) -> white butter.
Risotto is gross. Soggy half cooked rice never tastes good no matter what you call it. Some of these culinary traditions I can only laugh at. Risotto is garbage.
Have you tried it at a fancy restaurant? 99% of Italian restaurants outside of Italy either serve you raw rice with or rice pudding. It takes a lot of skill to make so you need to go to a quality restaurant.

Cow’s in Italy are rarely free-range, except for mountain breeds, so they mainly eat hay. That gives it’s off-white colour.
It could be Italian buffalo butter which pretty white
