    When would you add kamaboko to the fried rice? While stir frying? Also, what is the difference between cha-han and fried rice(yakimeishi)? The spices? I have some cha-han seasoning and was wondering

      You can add kamaboko after mixing rice and beaten egg. I mean at the same time with green onion and etc.
      About the difference between cha-han and yakimeshi, these two seem to be considered the same thing. In eastern Japan, fried rice is called "cha-han," while in western Japan it is often called "yakimeshi. (I'm not sure about it though...😂)
      There is also a division between "cha-han" in which the eggs are added first and then the rice is stir-fried, and "yakimeshi" in which the rice is stir-fried first and then the eggs are added.

    Yes, it is a kitchen torch. Also, a beaten egg is also known as scrambled too. Thank you for sharing your videos. I have learned a lot from them and also recipes my family likes.

    Kitchen torch is the right words. I never heard of it before so I googled it and used the shopping tab. They cost as little as $12.00. I think I might get one. But, I will have to order it online, just like dashi.

    Could one use sauerkraut in place of the kimchi? I ask because it is very hard to get kimchi where I live. Feedback is so great to have--thank your husband for sharing his responses.

    Another tactic I was taught by a chef from Hong Kong was to mix some of the beaten egg with the rice before frying. It helps keeping the rice more separate. Another thing he did was to parboil the rice for 2-3 minutes, drain it with a colander and steam it in a bamboo-steamer. It provides a drier rice and makes it more suitable for the wok.

    Very happy to learn the Salmon Fried Rice recipe, thank you.
    For decades I've made a very similar recipe to your Authentic Japanese Fried Rice that I got from my high school friend's Hong Konger mother. Everyone always loves it.
    ( ~regular white onion instead of green; --no MSG; +a little soy sauce, probably 1/2 tsp. for one serving) White pepper adds a delicious touch, but even with only black pepper, this is a rich, yummy fried rice.
    Are there many gluten-free Japanese noodles? If so, or if there are recipes that are good with rice noodles as a substitute for the traditional noodle, I'd really appreciate some recipes for those. 🌸

      @@JapaneseCookingChannel I can buy gluten-free soba noodles. I have recipes for soup noodles, but only for a couple of non-soup dishes. IF --- IF --- it is convenient, and you know good winter soba noodle recipes, that would also be helpful.
