They aren't going to be censoring or toning down Bayonetta 3. I know there was a lot of worry from the trailer of Bayonetta 3 that they'd be towing it down but Platinum Games have stated several times that Nintendo never asked them to make any of the games less sexy. As a matter of fact when they submitted the idea of Nintendo character themed outfits for Bayonetta for the gamees the only request Nintendo sent back was to make them more sexy. The only reason why the trailer for the third game looks so tame is because there's going to be an optional censorship mode. As long as it remains optional I'm fine with it. I don't know why anyone would choose it but then again I don't know why anyone would eat pizza with a knife and fork.
Chat kept telling you to play the first game to find out about things that have nothing to do with the first game. The angels look like monsters because biblically accurate angels look like monsters. They had to tell people "Be not afraid." for a reason. The snake demon turned you into a child because its title was "The Swindler of Progress".
Who asks for less music volume on _Bayonetta?_ (edit) Also, the amount of times she goes into panther within during combat causes me physical pain. Like, I know she's new, but the dodge spam is _real._ (edit 2) Alright, in the interest of fairness, she has gotten much better about not wasting witch time dodging. She still does it during umbran climax, but it's less obvious that you don't really need to when you're using that.
I guess no one ever told her every time a giant fist punches something or something gets stomped by a giant boot was Madame Butterfly attacking through a portal.

The funny thing is, most of the confusion and complaints she has with the game can be alleviated by reading (the notebooks provide more lore, the Book of Infernal Demons and the Book of Angels provide details on the various enemies in the game, the purchasable moves tell you how to do them and provide a special practice arena so you familiarize yourself with their controls, the controls themselves can be found in the menu where you can switch them around, etc.) and a lot of little things this game does make more sense with the context of the first game (the Golem, Balder's fight music, etc.).
Chalk it up to the streamer mentality. Things like reading lore and practicing controls are great when you're not playing for an audience, but it's hard to justify the pacing slowdown when your objective is to entertain the viewers.
I think she would do better if she wasn't constantly dodging and attack instead. Often she dodges or runs around pointlessly when an enemy isn't even attacking such as in the fight against Balder when she could just do some attack combos instead and dodge when she is actually being attacked.
My Dad always told me that the hardest thing in the world is to know how to do something, and watch someone else do it wrong. The amount of times she enters panther within from dodge spamming is painful, but it’s worth remembering that she’s new to the game, and is usually trying to keep up with chat to boot.

To answer your question about why you aren’t dodging things when you press the button, it’s because you are pressing it too much. Double tapping the dodge button turns you into the panther, canceling the dodge. Pressing it once is enough.
It's interesting seeing how even on the casual level you can still see a glimmer of the games deeper flaws. Enemies taking ages to kill, attack so fast and witch time so short gives little room for offense on enemies like lumen sage, etc
The lumen sage is supposed to be OP. they rival the Umbra. He’s the only other in the game that actually proves a challenge for Bayonetta. Also, with enemies taking so long isn’t entirely on the enemy, tbh. The point of the game is progress. The more you play, the better you get. Challenging old scores and combos. Learning new ways to take down enemies faster with less damage taken, etc. it’s a challenge and rewards system, whilst still being overly camp and entertaining. Because the Umbra are about pushing you to your limits and testing your mettle.

It's fine on this difficulty. I've seen an example of harder difficulty of the AI going full anime and breaking the core gameplay.
