I'd bet they are the way they are due to demand. Ketchup and Mustard (unless ordered without them) are on all the burgers and are probably the most used condiments, so that's why they are on the station in a much larger dispenser rather than the caulk gun. Its more efficient to have those large dispensers as they can hold a lot more product and would require less constant refilling.
@Studio69Fan I once was on table and noticed this (was on one side making food while 2 people were working on other side). At first, I thought it wasn't a big deal, but when you have a corporate supervisor (this guy came from Chicago by the way) who walks around the corner and immediately notices that, they told them "Hey, we don't do stuff like this, I want this fixed immediately" and then proceeded to explain for the next 3 minutes how much ketchup and mustard is suppose to go on each sandwich according to McDonald's standards, which, honestly speaking, there was way too much ketchup and mustard coming out of the guns that they were using. The guns that they use for ketchup and mustard in the video are suppose to add enough onto each sandwich, and if the order says extra this or that, then you just add another shot of em onto the sandwich. Other than that long explanation, I learned that the reasoning behind why they have the ketchup and mustard set up the way they do is because 1.) It's how corporate wants it all the time, and 2.) Both add just the amount needed to be put on a sandwich. Hope this explanation helps.
