I was in Afghanistan for a year and a half in 2012. I ALWAYS loved eating with the Afghan people and the Qabuli Pulao was the BEST! I have never been able to duplicate it - especially the raisins. Wht won't mine plump?! Yes, I tried this recipe and it was very delicious. Like she said, ALL recipes are different, but this was good. Also, don't wait for your rice water to reboil after putting in the rice. Oh, and make all 3 cups of rice. I tried to "not make too much", but my meat to rice proportions were off. I overcooked mine at 4 min boiling. Thank you, Miss. Miriam!❤

Interesting version of this dish. Spent 2 yrs in Afghanistan and thumbs up to the food of your country especially in Mazar-i-Sharif! I use to eat at the Silk Road restaurant often and simply fell in love with the food and people. I must say that the food in Helmam Province was considered more of a peasant food with goat and rice but still tasty although less special in preparation. Thanks for the videos!

Here in Argentina is difficult to find black cardamom, a friend who came from USA brought it to me. Wow your recipe is amazing. Hello, Miriam! I just made your Qabili Palaw and it was a huge success! Thanks to you! I've never tasted such delicious rice and the lamb was perfect. There is one problem in your recipe that I thought I should point out. Step 7 is about making the sugar solution made to color the rice. You have us dissolving sugar in hot oil and then adding water to the mixture. This is very dangerous (we have a saying "oil and water don't mix")! I caused a great fizzling and spattering. I was lucky to get out of the way before getting severely burned. It could also have started a fire on the stove and as it was, there was a lot of spilled sugar solution all over it. I think the directions need to be revised to have the person take the hot solution off of the stove and cool it to room temperature before adding the water. By the way, I also made Shirpera and had an issue I'd love your feedback on. I could only find non-fat powdered milk and that might be the problem. What happened was that as soon as I started adding the milk powder to the warm sugar solution, the solution started to crystallize. The only way I could get the powder mixed in was to add some very hot water, a little at a time. I finally got all of it mixed in but the eventual texture was grainy and I suspect it was supposed to be smooth. On the other hand, it tasted fanstastic (even though I reduced the sugar by 1 1/2 c.). I look forward to learning more from you!

This dish reminds me of the Bedouin Madlouba, except for the carrots and raisins, which I seen in Gazan rice dishes. It is sort of a fusion of the two. Looks wonderful, can't wait to try to make this one!
My wife and I were talking about the raisins in Qabuli Pallow a few days ago, while we were eating a salad that we'd thrown some sweetened dried cranberries into. We said that if cranberries grew in Afghanistan, they'd probably be used in Qabuli Pallow! Authenticity's a funny thing, no doubt!

Kabuli pulaw? Looks very similar to Uzbek pulaw... here in Moscow it's very popular dish... on my way home, I always pass by "Bukhara Plov Center" that operates 24/7, and the shop is always packed - both with Uzbeks and Russians. The tasty food unites...

I've been craving it for a long time, and finally found this recipe and felt inspired. I did the recipe, but in place of lamb, I used goat, and it was so delicious, easy, and authentic. Thank you!
Glad to find char masala recipe here. I will try to find black cardamoms at Indian grocery store. But if char nasala is similar to chat masala sold at Indianshop, maybe I"ll buy it.
Looks delicious! We have a similar dish in southeastern Iran called "goboli" گبولی which is prepared in a similar way, but we use potatoes instead of carrots plus chickpeas (optional) and different spices.
