    A fact for you : Arabic food "Shavarma" and Greek food "Gyro" both versions of Doner Kebap. Döner means "rotates" and Gyro means the same in Greek. And the word Shawarma is not an Arabic word. It's a Turkish word but it's pronounced with Arabic accent. It's actually "Çevirme" in Turkish. But Arabs can't say that. They don't have the "ch" sound. So they say shawarma. And it means "rotating (one)" . This kind of food was invented in Turkey, by the Turks . And their neighbors (Arabs, Greeks etc.) made their own versions.

    Just a tiny correction: Even tho it is true that the "cağ kebap" is the oldest form of döner kebap, it goes way back than 19th century. We have sources on that says this form of kebap or roasting meat style goes back to 13th century and can be seen around Crimean Tatars. Whic means its actually much more older and safe to say it can be traced and goes back to Central Asia. For the döner kebap as we know it today, even tho we do see some similar stuff from 16th century or so, this exact form comes from kinda late 19th century but mostly earlish 20th century.

    • @keithhasafastcar

      @Uğur Erken they cook chicken like that in many cultures so idk if I would call it a gimmick, but it did seem poorly executed

      Salt was used as a preservative before pickling, so yeah, it sucks out all the water out of food.

    • @kimlend7680
      @kimlend7680 ปีที่แล้ว +2

      @@keithhasafastcar Well thats because chicken was a luxury thing back then. Lamb was the primary protein or goat in some regions like Maraş. Cow or beef was like an insult, we do have stories about soldiers rose up just because they were served beef in the army. Chicken tho is not something can be eaten regularly. Simply because chicken is not the same animal as used to be so it was a luxury "option". Also you know its gimmick or just a show off just like that long ass kebap. These are not traditional at all and executed poorly for sure simply because thats not a good idea to start with. We do have fish within salt whic is alright because fish can handle the heat + salt and wouldnt dry as chicken.
      Also if you see something traditional and you wanna be make sure of it then make sure of its lamb %99 of the time. Beef started to become a regular protein since mid 20th century but its gotten popular and primary protein since 80's and even 90's in big cities mostly. And even today like me and my family, many people still refuse to eat beef as primary protein to stick with traditional cuisine simply because its not the same with beef because of our cooking methods. Yet "modern" families nowadays dont eat lamb and choose beef instead because lamb "smell". Thats whole another story tho. That just simply mean that those people dont know how to pick a lamb or part and cook.

      @@kimlend7680 The rice inside which was partially cooked can moisten the chicken. I'm not exactly fan of roasted chicken meat, but where I live some people cook chicken over salt. Turkey is our neighboring country.
