First priority is for GIR Cows fresh Buttermilk if that breed is not available then U can alternatively use any of desi/indigenous breed. It's recommended & instructed by Shri.Gopalbhai Sutaria who has developed this culture. Just avoid jersey & buffalo breeds. Check once with the milk vendor if he can arrange for U that milk for specific usage.
