I made this for supper today. Used a shallot instead of onion, no fat pork, used olive oil. used oregano instead of savoury (hard to get where I live!), used my homemade bread, baked it but topped it with shredded red leicester cheese for the last 15 minutes. Oh my goodness! This was drop the fork and knife delicious!! Thank you Bonita, and thank you to Raymond and all of your team!

Thanks for sharing what for me is a brand new menu idea. Never heard of fish loaf before but I will give it a try now. Cod is always available at my local chain grocery store and I do enjoy it. I'd likely just use some chopped bacon and its grease rather than the salt pork, and thyme/sage or something to replace the savory (not common here in Chicago).

Bonita, this is the same ingredients that I use to make a Salmon loaf which my husband and I make often. I love to make creamed peas and baked potatoes to serve with it. Would you say that your fish loaf taste similar to a Salmon loaf? Or even Salmon patties. I never thought of using Cod fish which is my favorite fish by the way. My late mother used to make this with canned salmon. She'd use two 213 gram cans. Of course, she'd pick out any bones and skin then break up the chunks of salmon. Scrunchions weren't available in those days. I'd use bacon now and I think Tsatziki would go nicely with this.

Bonita, have you made with with dried cod? That's one lovely Newfoundland thing we get here in Alberta. We do get "salt pork" -- "salted fat," but frozen cod is often already breaded.
Hi Diane, Thank you for your question and for stopping by... you can make this one with dried cod but you will need to soak it overnight to remove most of the salt and rehydrate the cod. The pan has a non-stick coating. Any suggestion is greatly appreciated. Love this dish though! Had it again for supper tonight!
Hi Carol, Sorry I just seen your message and anytime I don't answer you send me a email message I will see it quicker. Some parchment paper you buy in store are different. You can use your non-stick pan and just give it a little oiling or butter on the bottom. This fish loaf is not oily so it may stick even to the pan. But put a towel over it when you remove from the oven and that may release the loaf from the bottom with the steam. Thank you and have a lovely day!! Bonita

So whatever type of bread you and your family enjoy eating grate it down and use it in this recipe. You don't soak it just leave it stale, or it is also called outdated bread. I'd never heard of fish loaf. It's like fish and brewis with scruncheons -- but turned into a sort of meatloaf. Now I just need to find some savoury.
