  • Welcome to Bonita's Kitchen! Today we will be making Nan's Birthday Cake - Fruit Cake with a taste of all-spice, dried mixed fruit, and a few simple ingredients.

    Ingredients:
    Nan’s Birthday Cake - Fruit Cake
    Recipe:
    1 cup molasses ½ cup brown sugar
    1 cup butter or margarine ¼ tsp sea salt
    2 tsp baking soda 2 tsp all-spice
    ½ cup dates ½ cup walnuts
    1 cup cherries 2 cups raisins
    1 cup currents ½ cup mixed peel
    2 large eggs 3 cups all-purpose flour
    ¾ hot water
    Method:
    In a large bowl add top 12 ingredient’s! Molasses, brown sugar, butter, sea salt, baking soda, all-spice, dates, walnuts, chopped cherries, raisins, currents and mixed peel.
    Then pour ¾ cup hot water over all those ingredient’s and toss together.
    Let cool to room temperature, then in a small bowl crack eggs and lightly mixed, then add to other ingredient’s in the large bowl.
    Sift in flour and mix well.
    Grease a bunt pan or spring release pan and line with a piece of parchment paper, scoop batter into pan and smooth out. Tap the pan a few times on the counter to release any bubbles in mixture.
    Preheat oven to 325ºF and put pan in centre rack, bake for 45 minutes to one hour, depending on your oven. Check cake at 45 minute by poking a toothpick in the centre or side, if clean remove from oven. If not continue baking for another few minutes until ready.
    White Old Fashioned Icing:
    Recipe:
    2 cups confectioners sugar ½ cup butter or margarine
    1 tsp vanilla or almond extract ¼ cup milk or less
    Method:
    In a bowl add butter and cream well, then add confectioners sugar, vanilla and gradually mix in the milk until a soft and firm icing forms. ( NOT RUNNY )
    When cake is totally at room temperature add the icing to the top or all around. Decorate the way you like.
    Bonita’s Tips:
    Mixed peel is the peel of a orange and lemon, chopped in small pieces.
    Use a fancy molasses, sometimes a dark cooking molasses can be bitter.
    Using a bunt pan cooks the middle faster then a spring released pan.

    Recipe was given to so by a viewer ( Joy ) it was her grandmother recipe one she would make for them. It was given to her and she said she haven’t made it because her family don’t like fruit cake but she did enjoy it when her grandmother made it for them years ago.

      I need an old fashioned pie crust recipe.
      No ingredients had to be cold.
      The crust did not have to go in the fridge. The pie was done and put in the oven right away.
      My mom made this pie.

    I absolutely love fruit cakes and the spice in it is so beautiful and fragrant. Walnuts in cakes yummo. I actually just picked up dates and walnuts for a loaf cake I want to make this week. My dad’s bday would be tomorrow. My father in laws was the 20th and hubbys was the 21st. Lots of great people born in August. I hope your mom has a wonderful bday.       Happy Birthday to all! My mom was born on her moms birthday so it is double special to us. Mom cut her cake in chucks and wrapped it well to freeze. She only takes out one piece each time, haha she didn't offer any to anyone because it was her favourite. She got another cake to give out...haha.     Another great video i was comming to Newfoundland to visit family in Twillinggate and Fortune bay, but was stuck with BELL PASLY on thursday, had to cancel my trip , disappointed big time, but lucky enough to get my Newfoundland feeling by watching your video, you guys are just great, thank you for uplifting this old feller with your recipes.

    Oh my goodie!! That looks amazing. I love “old fashioned” recipes. I was looking for a fruit cake recipe last Christmas but didn’t find one that I liked. Well, I think I just found it! Thank you, Bonita and Raymond.
    Bonita, if I did want to put rum in this, how much would I add? Would I have to change how much all-spice I use? IMO, a true fruit cake has rum in it. But what do I know? 🤣😂🤣 Thanks, guys! ❤️

      Hi and thank you for stopping by and for enjoying our new recipe for a birthday fruit cake. You can add rum to it during the mixing stage and over the cake after it is completely cool down. Wrap it in parchment paper and foil wrap to lock in those flavours.     Hi bonita, I don't know if this is the place to ask this but I was just wandering if you know if you can flash free cucumbers, and use them when you have time to make pickles, I've seen that you can ,but I don't want to ruin my cucumbers, but can't use them right now, thanks

      Hi Linda, Thank you for your question and for stopping by.. I cut my cucumbers in cubes and slices to use in soups, stews and for making loafs and cookies. I haven't removed then to pickle. This will preserve them up to six to nine months in freezer bags so they don't get freezer burn or lose there flavour. When thawed they are soft but still good.       What I mean by in a jar is!! When you make your boiled icing put the base mixture in a mason jar to cool down and then put in the fridge to cold down totally.     I must say I didn't care for this one but that's on me and not the cake. It was just not what I was expecting flavour wise. I guess I'm just too used to the super sweet cakes we have today.

      I know right!! Growing up here in NL we mostly had fruit cakes at Christmas time. But over the years now my mom is 84 she may ask me to make one for her in July!! This one I gave to her for her Birthday and she just loved it. They freeze well and taste amazing every time.     I’m going to put that, except I’m going to use a rectangular sheet pan and spell out ‘Happy Birthday’ in the fruits that’s in the cake...otherwise, to me, it doesn’t spell birthday cake.
