I have her cookbook. I have used this recipe many times. This tapioca gel was so good that no binders were required to make gluten free breads, and the ingredients can easily be replaced. I made multigrain breads and they were all delicious. Thank you Lucy for your great work!!!

I used soy flour to replace the pea protein at a 1:1 ratio in making whole grain loaf. It worked very well. Protein holds it's shape better when baking bread.

@@nirmala15 I haven't used the active dry yeast. This type of yeast needs to be rehydrated before using. Almond flour can replace part of rice flour. I mentioned it in my book in some bread recipes.

You're welcome! Leave the bread in the pan for 1 hour while it cools on a rack after baking without removing the pan. After the bread has cooled, put it in a grocery bag at room temperature overnight so that the outside will soften.

The use of instant dry yeast in dough fermentation requires proofing, but does not require the process of dissolving the yeast. You can proof the dough once, but the bread tastes better with multiple proofs.
@nadiaandreeva4628 Keep away from heat while making tapioca gel. The dough should be soft, if not, add some water. Hard dough will not rise. After the bread is done and cooling for 2 hours, put it into a food bag for 4 hours before slice. The crust will be soft.
In my gluten-free bread recipes I use less starch than most other bread recipes, less than 40%. Typically gluten-free bread recipes contain 50% starch.

Most home cooks who wear plastic gloves either have sensory issues or skin sensitivities... There are much worse and more significant entities that should be criticized for plastic use
If everyone is using one-time-use disposable plastic gloves for each meal prep, it causes a massive issue. It's a pretty big, significant problem which is ending up in the ocean. It's worth a comment.
I am also very bothered by single use plastic. However, I also have a skin condition and always wear “disposable” gloves during food prep. I can wash my gloved hands repeatedly without suffering consequences. I can also reuse the gloves many, many times before throwing them away. I wouldn’t always assume that the gloves are being used once and thrown away in applications such as this.

You can use raw sugar, coconut sugar. If you use maple you need to adjust the amount. It will change the moisture of the dough.

Pea protein powder contains about 80% protein. I don't think it can be replaced by the flours which have low protein.

Pea protein powder is made from peas. Its protein content is relatively high, about 80%. I bought it at the supermarket. It's also sold online.
