I definitely have to try Chef Brigette Joseph recipe for doubles. I just have to go to the Caribbean market to get the ingredients. But it seems Chef Brigette Joseph was a little nervous but that's cool. She did a great job!

Even though I have never made them from scratch myself...as a cook of many years you know you cannot make a curry, paprikash, or anything with complex and dynamic flavours on the stovetop in 20 mins. When I saw 2+ hours to cook the channa I knew this was the recipe! Real cooking that was going to get me the authentic result I aim for. Who wants to waste ingredients, attention, and time on a recipe that is “pretty good”? If I make something, I want it to be the best... no bs. The pretend YT intro says everything about you Chef Brigette... you’re the real deal. I will be cooking my channa from DRY and throwing the word ‘popsy’ around like I invented it ... Some of the recipes I've seen on TH-cam for doubles makes me wonder where the hell did they buy their doubles from and what part of 🇹🇹 they come from. This is by far the best recipe I've seen on here. It looks authentic and I know it tastes good. Its the same recipe I use to make my channa. Great personality and smile also.

Soooooo! Today (June 3rd 2021) I tried this recipe... measurement to measurement (cut down on the salt cuz my mother-in-law has highblood pressure).....n let me tell you! It was awesome! Authentic! Easy to follow! I've been surfing TH-cam looking for a doubles recipe since last lockdown and two days ago, this video caught my attention! Awesome awesome job Chef B! U the real MVP!

The one or two times I tried it it was crispy and fluffy. Never knew you had to sweat it for softness and thinness. It was perfect. My husband always laughed at me when I tried making it but today he said it was better.than the doubles man's. Thank you for good demo and detailed explanation. It made all the difference. I guess the brand name chefs never give the secrets. Your method is de bess!!! Keep working in honesty. God bless

Hey Sabina, I have tried and tested this - use baking powder! Try a tsp and a half. Works like a charm! Baking soda or baking powder is used to expedite the process of softening the channa and dhaal; it helps it to "mash up".
