    Happy New Year! Oh my goodness, that looked delicious! Nice to see the Horizon put to work. I find it takes a while for mine to get up to optimal conditions in the winter as well. A bit of a fuel hog too if it’s really cold. Oh well. Keep up the great work.

      Thank you! All the bacon is gone already!!! It was a major hit! I put in a very large order at the butcher and my entire smoke will be filled to the brim with pork belly for an upcoming video. I’m also tweaking a few things to make it easier. Hopefully this batch turns out as great as the last one!

    Out of curiosity, why wouldn’t you smoke the bacon in the vertical unit suspending it in the chamber?

      I washed it off really well before the smoke. Definitely not to salty.
