I thought a 25 minute video of a Katsudon place was gonna be way too long. Turns out I was mesmerized by this guy's efficiency and could have watched for even longer. Japanese "fast food" is so good. I can't wait to go back.
I can't think of a place that's more charming and serving up meals like this!! It's ideal to stop 🛑 in on your lunch break and grab a quick bite to eat 😋 but leaving there feeling full and satisfied is the key 🗝️!! This guy cooks with a lot care and passion!! What a great establishment. The tonkatsu looked spot on. I liked the cook is using induction burners to finish off the dishes. It’s a small place pumping out a lot of food. Using induction burners makes the finishing so much easier. I was impressed that he ordered portioned size pork loin. What a huge savings in time and provides a uniformity for the katsudon. Great restaurant overall.

I so wish they had a place here in my country and city. I’ve never had this meal but it looks delicious. I normally hate running eggs but I would love to try this meal. One question I have is, is that oil in the pan he puts the pork in then pours the eggs over the pork?

Judging by many videos of Japanese restaurants like this one, that looks like a dashi broth (kelp, bonito flakes and soja sauce). It seems to be the base of a lot of ramen dishes as well as this one.
He uses his hands to take raw cutlets from the tray to put into the frying oil. Then he goes back to cutting and serving cooked food. This is why gloves can be less hygienic. You can feel when your hands are sticky and can wash them, and you're more inclined to use tongs to handle raw food. You can put the tongs into the boiling oil to sanitize them. You can't easily tell if your hands are contaminated with gloves on. Looks delicious though.
what is amazing for me, altough i saw a million videos with japanese cuisine and small restaurants..i dont remember seing anyone eating bread....you dont no?:) thx
Я не понимаю, он просто взял обычный бифштекс, зажарил во фритюре, что не очень полезно для здоровья. Разрезал его и зажарил еще в яйце. Ничего особенного, обычная забегаловка. У нас бы никто к ним не пошел, заведение так себе, себестоимость блюда высокая.

There was a place Near Yokohama North Dock (Higashi Kanagawa) that made the absolute best Hire-Katsu I've ever had. Really miss that time

It isn’t oil. It is a sauce made from soup stock, soy sauce, mirin, a little sugar to make a bit sweet.
