I make it like this as well. Lots of pecorino and black pepper. My only gripe is the macaroni. This looked way overcooked. You always ask Pasquale if it's al dente, and he always says good, real good. However, it's never al dente. That may be his preference. Mine is really al dente.
I will say to Pasquale make your favorite pizza . My dad ran a restaurant when I was young called Pasquale's pizza so maybe your pizza will be better . Thank you for your great videos . It doesn’t need additional seasoning. This simple dish is delicious just as it is. Other seasonings would ruin this dish. I’ve eaten it this way my whole life.
Good olive oil is not bland at all. Add the rich cheese and garlic and pepper it's a boat load of flavor . Add some grilled chicken or shrimp and you can't go wrong.
You should post a "grocery list" ahead of time for the Monday night lives so we can cook along with you guys

Exactly the same way my mom makes it, except she uses cavatelli. We grew up eating this. One of my favorites, especially on a cold day.
