Yeah i came here to say this! One is more opaque than the other and the less opaque one is good for slightly adjusting the value without massively altering everything. Thats me coming at it with oil painter brain so it might also have differemt uses in gouache that I havent figured out yet
I use regular pencil when I use gouache and just erase it slightly with kneaded eraser what's left can be covered with the paint.I also like to dry out my gouache and use it like a watercolor I like the results either way because it's vibrant.

Gouache is opaque so you can cover the graphite quite easily. Did that countless times on my plates. Just that don't use beyond 2B level or the graphite will smear.
The two whites that come in the palette have their different uses, one is called "Magic blanded" It is used to mix with other colors. And the other one, I don't remember its name but its pigment is even more processed and purer, so it can be used for painting like any other paint, it is more opaque. Research on the Internet!

It will dry out through time yes. There are lots of videos about it if you search for it. But from what I've seen, it seems to be OK for up to a year if properly stored and sealed. You might need to moisturize and stir some to get the new feeling. But mostly it seemed to be in quite good condition in that time span. If you take care of it and open it up and spray it every few months it should not dry out.

I learned to only add white gouache to my palette only when i need it :X
I have another great tip . Cover your gouache with glad press n seal wrap and it will keep the gouache in good condition.

In the 56 set it's actually two titanium white. Don't know why, seems like it would be nice to get the both ones but no 🤷🏻♀️

I tried using goache in canvas and it did turn out quiet good but I think it looks better on watercolor paper
Regular gouache wouldn't work well on canvas. It would perform way better on watercolour paper. I think you can use acrylic gouache on canvas though
