Central and south america countries are really hard for celiacs. I have recently been in Colombia for 15 days and it was reaaaaally hard for me.
I was expecting to find a lot of gluten free food, thinking about the use of corn in every meal that they have... But at the end they also use wheat and the problem is that they don't know the disease and not even the word "gluten"... So even if they offer you gluten free food it will be contaminanted.
I was tired of ask for gluten free food and being answered as "you mean vegetarian food?". Off course I was contaminated several times and I returned to my country really sick... I wans't able to book airbnbs in my travel because I was with 15 more people, but if you travel to this type of countries, be sure to book an airbnb in case you need a kitchen.
