    Well done. NO OTHER video said anything about "oiling" the sausages, after filling. I think this to be a very imp process...to prevent the casings from splitting/tearing after they are dried. 👍

    I have started marinating the pork today to try out your recipe. Will let you know the results. But I will also smoke them with hickory pellets. Wish me luck. Hopefully they taste like the Agassaim rosary sausages

      Yes yes. I made 2 kg sausages following the recipe to the T. Had some Goenkar friends over last weekend for dinner and they wiped it out. All want to order from me now. Only additional thing I did is, I smoked the sausages before drying them in the sun. Used a cold smoking process. Links below. This is the best recipe I ever tried in Canada. Go for it Goemkars worldwide.

    Very nice I make sausages at home but the taste is not the same like we eat in Goa but still we enjoy I never put oil for the casings but I will definitely try,can you please let me know why you put oil may for a good shine thank you much.

      Hi maria I must say even wht you make will be definitely good coz no matter wht whn we make thinks by our self it's always priceless....well when you keep them for drying add oil it's not necessary it's just for the shine ....tht video Is my very first video so was not up to the mark as of today time I'm doing it but definitely I'll remake this video...until thn god bless you 🙏

    Nice recipe. But can you pl give the proper measurement for the ground masala.

      Well for dry masala I hv use
      30 kashmiri chillies
      10 -12 garlic cloves
      2inch cinnamon stick
      1 tsp Cummin seeds
      15-17 cloves
      2inch ginger
      20-25 peppercorns
      1 tsp turmeric powder
      This is all tht youll need for dry masala hope this helps stay safe god bless

      You can keep it out as there will be vinager in it so it won't get spoiled ..

    Do we have to put the sausage filling in the casing and is there a another way to dry the sausage fill unable to dry them in the sun?

      Hi Loretta u can use another method of drying hit your oven thn turn it off n thn keep the sousage in n Close the oven with the heat it dose get dry I did it once keep the process on until its dry hope this helps god bless

      I make sausage meat in Canada. Instead of filling in casing I spread the meat in a SS Tray, cover it with net to keep the insects away and keep the tray on my deck in the shade. Mix it continually and in 2 day or so it is dry enough to fill in jars and store in the fridge. Here the air is dry do even in winter it dries in the basement.

      I haven't tried using fresh intestine but having said so you need to clean the intestine with salt and dry it very well for well preservation hope this helps thank you

      So you mean we have to dry the intestine? We cannot make sausages using the wet intestine and the drying the entire sausage together?. However thank you for your quick reply appreciate it.

      You can do that but the preservation does not remain for long then you have to finish the sausages faster can't keep for long

    This video was very useful. Thanks for posting.
    I have few doubts after watching the video.
    1. Was meat grinded after the marinate.
    2. For filling the meat did you use dry intestine ? Or do we have any other option to fill it ?
    2. For how many days we should it keep for dry ? I mean smoked in sunlight ?

      1.the meat was not Grinded after marinating
      2.for filling the meat i used dry sousage casing which is easily available on amazon or eBay
      3.the more u dry the more its better fir long life

      I spoke to a 90years Goan lady, she said they would leave the meat in salt and keep draining off the water. I remember thinking what, raw meat no refrigeration as this was for at least two days!

      Well I used for 2 kg meat
      And masala is
      30 kasmiri chillies
      10/12 garlic cloves
      2inch cinnamon stick
      2inch ginger
      1tsp Cummin seeds
      15/17 cloves
      20/25 peppercorn
      1tsp turmeric
      Grind all this to fine paste...and rest is same as shown in the recipe hope this helps

      Ya I used cider vinegar coz I don't have excess for goan vinegar but honestly did not make big difference
