With that amount of cheese, 6 cups, I added two more eggs and an additional cup of milk. Plus I did not cool the pasta after I drained it, I put the butter in the pot i cooked the pasta in, which was still hot but off heat, re-added the drained pasta, mixed with butter, and then added the first two cups of cheese which brought the temp of the macaroni down to a point i wasn't concerned about scrambling the eggs in the custard. Without the extra two eggs and cup of milk I added this batch of Mac n Cheese would have been dry. I do like this alternate way of making Mac n Cheese without making a roux. I Will make again, but will probably add even one more additional cup of liquid, likely a cup of heavy cream.

So that they don't stick to eachother.
The only time you'd *want* to keep the starch is in cook-pasta-in-sauce recipes because it acts as a thickener, and for those recipes there's literally no way to remove it even if you wanted to.
