Okay, I couldn't wait for New Years....this was as good as it looks 1. The ratio of oil to flour is genius (I used butter the house was smelling sooo good) 2. I had to add Tony's at the end....my Slap Your Mama is to spicy to risk my soul, so I only used a pinch of that 3. I may change the sausage next time, I used chicken adouille and turkey necks 4. Why was my shirt and chin covered in juices 😂 I am not a savage but my mouth/jaw must've been outta joint cause I was trying to get gravy meat and cornbread with greens on a fork and felt like I should've found a corner and stool facing the wall.....😅 5. I will no longer be bringing regular collard greens to the dinners

I’ve made my greens this way for years but the ingredients are a little different like substituting kale and/or collards using chicken and sausage. @ the roux was way thicker and not as dark as his was even though I had cooked it for a while trying to get the same color. I also tried to do the one pan thing with cooking the meat on one side with the roux on the other and I believe I mixed it prematurely. I mixed it before my sausage started producing oil and mixing it in made it even thicker. I also believe I chopped my bell pepper/ onion too small (out of habit) so it looked like I had way more than him even though I followed recipe exactly that didn’t help with the thickness either. But once I added the liquid to the mixture it started to look the way it was supposed to. Minor things that didn’t change the integrity of the meal. Like I said I had to really trust the process but no matter what just follow the recipe and your meal will be delicious!

I don’t like shrimp so I would have to leave them out, but my cousin by marriage made me my first taste of ‘gumbo’ greens a few months ago and I will never go back to regular greens again. He used sausage and smoked turkey and I could not believe the awesomeness of those greens. I had never even heard of them before. I was wondering if, some of the seasonings used would not be good if I wasn’t adding seafood(shrimp)? You know like the Old Bay and that Badia seafood season he added. What substitutes could I use or does it matter?
@kayjmac42 I love hearing how gumbo greens made such an impression on you! If you’re leaving out shrimp and other seafood, you can definitely skip the Old Bay and seafood seasoning. Instead, you can use smoked paprika, garlic powder, onion powder, and a bit of cayenne for a flavorful kick. These will complement the sausage and smoked turkey beautifully. Finna attempt this before thanksgiving just to be clear all your seasons really are from the gumbo the neck bones or any meat I decide to sub in don’t need to be seasoned ?

It’s nothing wrong with leaving it in the pot, but I always rather remove it. So normally I just search for it or best case scenario, once the pot is halfway empty it’s always easier to find.

Hi, and thank you for your question. No the neckbones that I’m using requires no seasoning because they are packed with flavor. In the background, you’re seeing me just add them to the pot of boiling water put the lid on and then I’m going to cook them on medium heat with the lid on for approximately one to one and a half hour until forktender and the meat is falling off the bone.

@wakandaforever Great question! If you’re cooking for three, cutting the recipe in half should work perfectly. Just divide all the ingredients by two, and you’ll still get all those amazing flavors. If you’d rather not scale it down, you can always make the full recipe and store the leftovers-keep some in the fridge for the week or freeze portions to enjoy later. It reheats beautifully, so you’ll have a ready-made meal for another day. Let me know how it turns out!

I don’t like shrimp so I would have to leave them out, but my cousin by marriage made me my first taste of ‘gumbo’ greens a few months ago and I will never go back to regular greens again. He used sausage and smoked turkey and I could not believe the awesomeness of those greens. I had never even heard of them before. I was wondering if, some of the seasonings used would not be good if I wasn’t adding seafood(shrimp)? You know like the Old Bay and that Badia seafood season he added. What substitutes could I use or does it matter?
@kayjmac42 I love hearing how gumbo greens made such an impression on you! If you’re leaving out shrimp and other seafood, you can definitely skip the Old Bay and seafood seasoning. Instead, you can use smoked paprika, garlic powder, onion powder, and a bit of cayenne for a flavorful kick. These will complement the sausage and smoked turkey beautifully. Let me know how it turns out!

Finna attempt this before thanksgiving just to be clear all your seasons really are from the gumbo the neck bones or any meat I decide to sub in don’t need to be seasoned ?

Just follow the recipe as shown, and the seasonings in the gumbo will take care of the flavor. How do you find the bay leaf after you drop all those greens in there? Are you leaving the bay leaf in the pot?
Hi @marcuscamp2829, thanks for watching and your question. It’s like finding a needle in a haystack 😂. Truthfully this comes down to you. It’s nothing wrong with leaving it in the pot, but I always rather remove it. So normally I just search for it or best case scenario, once the pot is halfway empty it’s always easier to find.
Yesssuhhh 🤌🏾 only thing im doing differently is adding crawfish tail meat with the shrimp. Thanksgiving tomorrow, GAME TIME!!

Question - Are you seasoning the Neckbones at all in the beginning?
Hi, and thank you for your question. No the neckbones that I’m using requires no seasoning because they are packed with flavor. In the background, you’re seeing me just add them to the pot of boiling water put the lid on and then I’m going to cook them on medium heat with the lid on for approximately one to one and a half hour until forktender and the meat is falling off the bone.

Hi @kdproj532! If you’re using Better Than Bouillon Chicken Base, mix 2 tbsp with 3 cups of water for the best flavor. If you’re using chicken broth or stock, you’ll need about 3 cups, but you might need to adjust slightly depending on how strong the flavor of your broth is. Since im only cooking for 3 instead of 6 now how much do I reduce the ingredients, by half?
@wakandaforever Great question! If you’re cooking for three, cutting the recipe in half should work perfectly. Just divide all the ingredients by two, and you’ll still get all those amazing flavors.
If you’d rather not scale it down, you can always make the full recipe and store the leftovers-keep some in the fridge for the week or freeze portions to enjoy later. It reheats beautifully, so you’ll have a ready-made meal for another day. Let me know how it turns out!

Sorry for the late reply! You could pair those greens with some rice, mashed potatoes, or even roasted sweet potatoes for a nice balance. A good buttery biscuit would also be a great option if you’re looking for something different than cornbread. Thanks for the great question!
