My purple stokes brand productivity in my raised bed in Hawaii is the best I've had yet; next to that is the murasaki brand...love um. However after 5 months still not as large as yours but I its okay for me, home grown trial and error. Love it! My therapy.
I agree this is a good idea. I'm curing mine in the hottest room in the house which is our family room\office on the south side of the house. Hopefully it works since this room is typically around 77 but your suggestion is much better.
I do all the yams and sweet potatoes the same...WASH them WELL! Put them in the oven about 325 F. Bake till done. If you cook em in the microwave I leet them soak a bit in water then usually use shortening or bmayonaise to oil the skin You can also wrap each one in a damp paper towel. Usually 8 min for larger ones and then check for doneness Usually roll em over and another 8 min...maybe less. I often eat them straight out of the skin. Ive made casserole and pies too,
DO you have any issues with pests attacking your taters on those racks? Mice would chew on them in our barn if we left them out like that and the deer go after them while they are in the ground.

I tried baking a purple and an orange a few days after I dug them and the Orange was more moist than the purple, so I was slightly disapointed, so I looked online and it said that's common so best way is to boil the purple. I didn't do much searching online, and I did just dig them so I don't know if that mattered... I'll give them another try by boiling them but if they are the same then I don't know if I'll grow again. will you be carrying a white variety next year?
Travis you know you messed around and waited to long to dig those Jets. Yeah blame it on the hurricane lol. I would definitely try the purple, my favorite so far has been the Beaugards. I do like me some sweet taters. I'll pop one in the microwave and open it up, add butter and cinnamon sugar and make a meal off just that.

We live in zone 5. We cure our sweet potatoes in seed starting trays on heat mats with lids on them for a couple of weeks. Works well.

Did you noticed the white fluid in the purple sweet potato when cut? Is that poisonous?

I might would if I didn't have a couple cats that stay at the barn and keep the mice and rats under control.

Haha. We always try to wait until the weather cools a little before digging. Sometimes that bites us as it did this year.
