    Daniel shows you how to make bossam. It's actually very easy to make at home if you get the right measurements for the broth. I'll show you how to make a fail-proof one with everyday ingredients (including coffee :)
    Lately, in Korea, many restaurants are also serving it with this honey-garlic topping as well. I'll show you how to make that one as well. But the traditional way is to eat it with kimchi and spicy radish salad, along with a dab of ssamjang.
    It's my favorite meat dish... and I want you to try it in the comfort of your home too :D

    Bossam is one of those things I make for myself when I want to feel spoiled. In fact, once after a break up, I went straight to the grocery store and made myself some bossam. After wards I was like "Sucka, I'm dope. Stay outta my life." ¯\_(ツ)_/¯

      @@FutureNeighbor what if I used pork shoulder instead of pork belly? I can't find anything that has pork belly. Even the butcher shops. 😪

      @@baconandeggs9113 pork shoulder should be okay, just get a fatty cut. i make my own version of bossam that i learned from just growing up krn (lol) and I've seen shoulder, butt, leg/shank(?) used. it's honestly your preference too! some ppl don't like as much fat either so you do you! :)

      @@beepbeep6201 thanks. I had already used it and it was about 25% fat. It was very tender. And i had used the broth and the rest of the meat for ramen. Definitely would recommend if you feel a little lazy. Lol

    Dear future neighbour, a tip Ive learnt from my granny to get a more uniform slice cut of bossam is to let the meat cool off at room temperature for a least 5 mins before cutting it so as to let the protein firm back. Cheers~ good vid as always

    Good idea. Will try adding coffee and see what it does to the taste. I usually add Chinese five spice powder and soya sauce.

    This is the only way I cook pork belly for myself now. I get nauseated by chewy fat, but man,.... cooking the meat down like that makes it so incredibly tender that even the fat just melts in your mouth. Thank you, Korea haha

    Hi. Thank you for the recipe. I have tried it many times and love it. However, I just discard the broth after I take out the meat. What can I do with the Bossam broth?

      You can try using it as a base for kimchi jiggae….dunno though; it’s just off the top of my head and haven’t ever tried it before. I wouldn’t use the coffee though if you want to reuse the broth.

      Jane T Hi Jane, no it doesnt. I used americano blend. Just avoid those instant coffee sticks with sugars in it ;)

    USians/North Americans, I made this with pork shoulder/butt and it was great! Cook a little longer if the cut is thick. I can't do anything caffeinated so I skipped that step.

    Ok if anyone else is watching this in 2019 -- what uses could there be for all of that leftover broth??🤔 I'm sure many people throw it out, but I feel like you could easily use it for a stew base or something?? No?? Let me know if anyone knows recipes :)

      To be honest, with what's been cooking in it, I can reasonably see it as a soup. Or a broth for ramen. I think it'd be delicious, and I'm almost definitely going to try the broth after making this

    My great grandmother used to love pork fat! Especially if it was crisp around a pork chop or something which led my father to love pork fat which led me to love pork fat! Once a month in the UK for Sunday lunch I would make a pork belly in the Crock-Pot. You know why we love pork fat? Because it melts at 98 Degrees which is body temperature so it doesn't hang around and make our mild steel like we ate shortening or butter.

      I've never done it, but chicken thigh is quite similar to pork in terms of texture and fat content. You should try it and come back with results 🙂

    TIP: If you let the meat cool in the cooking water to just warm, the juices redistribute into the meat so when you cut it,: 1. The meat is a little firmer and cuts more evenly2. More importantly, the meat stays juicy even when it cools. If you cut it as soon as its done and still hot, you will find the meat dries out and the texture is dry and a little hard at room temp.

      MrChrist741 I have always seen instant used because it dissolves onto the broth. I guess you could use roasted if you are going to put it into a sachet for tea. That way the granules won’t be all over your meat😉 Personally, I would stick to instant..

      It can be hard to find, and quite possibly may be dependent upon what region you live in. At my local grocery stores it all goes to bacon, no chance to even order it whole! If you've got the $$, your best bet is to order it direct from the farm/CSA.

      If you have never had pork you probably don't know that pork has a distinct taste and pork belly has a distinct texture, so there is no way it is going to be "the same". Fried beef or fried duck would not be "the same" as fried chicken either.
