Recipe:
Ingredients:
3/4 cup sugar (or jaggery)
1/4 cup rock sugar (optional, but adds little savoury taste )
4 ripe bananas, peeled
3/4 cup wheat flour (atta)
1/2 cup semolina (sooji)
Pinch of cardamom powder
Pinch of Himalayan salt
2 tbsp fennel seeds (optional)
Water (as needed)
2 tbsp coconut flakes
Groundnut oil (for frying)
Instructions:
In a blender, grind together sugar (or jaggery) cardamom powder, and rock sugar until smooth.
Add peeled bananas to the mixture and grind again until well combined.
In a large mixing bowl, combine wheat flour, semolina, salt, and fennel seeds (if using).
Pour in the banana-sugar mixture and mix well. Slowly add water to form a thick batter.
Let the batter rest for 1 hour.
Stir in the coconut flakes into the batter.
Heat groundnut oil, Using two spoons or your hands, shape the batter into small balls and carefully drop them into hot oil.
Fry until golden brown and crispy on the outside.
Remove with a slotted spoon and drain on paper towels.
