00:15 Champagne Overview
Bollinger was founded by Hennequin de Villermont, Paul Renaudin and Jacques Bollinger in 1829. It earned a Royal Warrant in 1884. Lily Bollinger greatly helped develop its popularity after her husband passed away.
Today, Bollinger is one of the few remaining independent champagne houses. It owns 160 hectors of vines, which caters to 60% of its production with some from Grand and Premier Cru plots. The still wine is fermented in a combination of oak barrels and stainless steel tanks. The champagne is then bottled for at least 30 months, which is double the legal minimum.
The Special Cuvée is a Cru style despite using some and Premier and Grand Cru grapes in there. It's a tradition blend style and it contains 60% Pinot Noir, 25% Pinot Meunier and 15% Chardonnay.

You're looking at quite a lively perlage or bubbles that we say. And in terms of hue, we're looking at mid gold. It's not going to be as pale as straw, but it's not really got the age yet to be extremely golden.
02:46 Nose & Bouquet
There's a good diversity of notes, it's quite vivid as well in flavour. You're looking at on the first nose, green apples and butter, and on the second nurse, if you persist and you keep smelling, is going to start to feel more like baked apples. So a buttery apple with a hint of vanilla as well. There are going to be some notes that you will taste later on, although it seems to be quite coy at this stage.
03:39 Palate & Flavour
Expect high acidity and a tart palate with a relatively mature profile that delivers good complexity and length. Expect an opening of green fruits such as conference pear and granny smith apple. Meanwhile, you may also detect zesty grapefruit.
The heart consists of butter, baked apples, and hazelnut. Finally, the finish is yeasty with notes of brioche with added chalk minerality. A hint of vanilla adds a fragrant note.

Ideal for men in their thirties, Envol is an excellent all-day office fragrance that works well in both the daytime and the evening. Indeed, it would be great for dates, too. Otherwise, although a distinctively masculine fragrance, it is far from overbearing.

Bollinger Special Cuvée has a wonderfully imperial designer with bold red and golden colours. The label is ornate while the box is very eye-catching. The plaque features a shield whereas the cork doesn't quite return to its original shape.
Despite being well over $50, Special Cuvée offers good value. It's versatile champagne that can be enjoyed for a variety of occasions but also enjoyed alongside a meal.

CP enjoyed his Bollinger with homemade pizza. However, it can also be paired with shellfish, pasta, white meat, and both hard and soft cheese. Dessert and blue cheese are best avoided. Otherwise, it works with mild tobacco blends like a Plasencia Reserva Original or Davidoff Signature No. 2.

CHAMPAGNE IS MADE FROM A BLEND OF THREE POSSIBLE GRAPE VARIETIES , BLACK GRAPES PINOT NOIR FOR RICHNESS, PINOT MEUNIER FOR A FRUITY HINT OF SPICE, AND CHARDONNAY , A WHITE GRAPE, FOR DELICATE FRESH QUALITY. IN A SOPHISTICATED, MODERN SOCIETY, IT IS IMPORTANT TO BE POLITE.
What do you think of a cigar pairing with a Cuban cigar such as Hoyo de Monterrey Epicure No. 2 or H. Upmann Magnum 54 or (which I can well imagine) Romeo y Julieta Churchill?
Great question! I'd lean towards the Magnum 54 or potentially the Epicure No. 2. Romeo y Julieta may be a little too full-bodied for Bollinger. However, the Magnum 54 has some properties, which would pair nicely with it!

Does the acid act as a good balance for the yeast?
Generally, it does, yes. However, the yeast is still going to be very pronounced.
@@Bespokeunit oh okay. I drank a bottle of Charles Heidseick the other say and it had a very high amount of yeast flavor without enough fruit flavor to make it refreshing, I wasn't into it though I see why people would be.
This one sounds more balanced but I have to see for myself
I drink 5-6 bottles of this on Christmas Day. It is my favourite champagne. i prefer it on the colder side

I think the colder is is the more it brings out the apple flavour.
