- Easy to make homemade lechon sauce Mang Tomas style. This sweet and tangy filipino pork liver sauce is perfect pairing for roast pork ( lechon ) or even use as all around dipping sauce.
INGREDIENTS:
2-3 tablespoons cooking oil
6 cloves garlic, peeled and crushed
1 large onion, minced
400 grams pork liver, pureed
salt and ground black pepper to taste ( adjust according to your taste )
6 tablespoons vinegar
2 1/2 cups water
5-7 tablespoons brown sugar
3 tablespoon breadcrumbs

Yes pwede din gamitin ang liver spread pero kung maramihang lechon sauce ang gagawin mo mas mainam at makaka tipid ka kung pork liver or chicken liver ang gagamitin mo.

Can you use beef liver?
If I make this in a batch, how long can I store it in the refrigerator or freezer?
To store the sauces, make sure too cool to room temperature before placing in an airtight container, in the refrigerator where they can last up to 3-5 days as long as the sauce is handled and stored properly or longer in your freezer ( more than a month ).

Mga 6 1/2 cups or 1.6 liter ng tubig. Depende rin po iyan kung gano kalapot ang nais nyo sa sarsa.

Dark Glass Other sarsa ng lechon recipe uses liver spread but I think if you want more tastier and authentic lechon sauce you need do it from scratch using pork liver.

Yes Jorge pwede rin kung iihawin, pero okey din naman na pan grill lang dahil same pa rin naman ang magiging lasa ng sarsa.
Ask lang po okay lang po ba na overcooked ung liver?
Kapag iihawin o ipa pan grill yung atay mainam sana na hindi overcooked para madaling i-blender o kaya ay tatadtarin ng pino. Anyway, kahit hindi lutong luto yung atay kapag na pan fried o inihaw okey lang dahil igigisa naman nating mabuti yung atay after ma blender.

It will last up to 1 week minsan nga higit pa kapag nailagay sa ref, lalo na kung maayos ang pagkakaluto.Importante na ma sangkutsa mong mabuti yung atay para hindi madaling masira. Initin mo nalang kung gagamitin ulit, medyo lalapot lang yan kapag nailagay sa ref kaya kapag ininit mo kung medyo malapot mag add ka ng konting mainit na tubig.

Ano po pwede subtitute ng breadcrumbs?
I don't think any substitute sa bread crumbs kasi hindi naman pwede ang harina at cornstarch dahil magiging paste like ang texture ng sarsa . Available naman sa any groceries and supermarket ang bread crumbs kaya try mong humanap.

Kung sa room temp one day pwede yan wag lang sobrang init ng panahon. t will last up to 1 week minsan nga higit pa kapag nailagay sa ref, lalo na kung maayos ang pagkakaluto. Initin mo nalang kung gagamitin ulit.

Yes you can do that, since we live in a flat we cannot roast liver so my alternative way is by boiling.

Hi Elliec! it can last up to 2 weeks basta maayos ang pagkakaluto at nilagay mo sa fridge. Wala tayong ginamit na preservative dito sa sauce kaya hindi napakatagal ang aabutin nito di gaya ng Mang TM na may preservative.

Island Momma You can reheat it in the microwave or in the sauce pan over stove top. If you find the sauce is too thick you can add a bit of water while reheating in the pan.
