Modifying a carbon steel frying pan.

- My sweet wife bought me a carbon steel frying pan, but it had a powder coated handle and it was fastened to the pan with rivets (not the best option). I'm going to take care of both of those problems in this video.

I've been cooking with carbon steel pans for over 20 years. Here is the easiest way to season (works with cast iron as well). Put the pan on the stove. Put your favorite seasoning oil in there. Cover the bottom with at least 2mm of oil. Turn on the heat on medium high. Wait until the oil starts smoking slightly, then count to one minute (turn down the heat, just some slight fumes is enough). Dump the oil into a heat proof container (dollar store steel sauce pan or something). Wipe the pan clean with a paper towel. Put it on the stove, put some fat or oil in there, add food, turn on the heat and start cooking. Everything will slide. Repeat when needed. You are pretty much deep frying the fat without food. It works wonderfully.

Yup, just cook with the thing. Not so sure about the rape seed oil.... I like animal fats for this kind of thing.

Grapeseed oil makes the best and most durable seasoning I've found for cast iron or carbon steel. Has the highest smoke point of all the cooking oils.

I’ve worked in kitchens for over 15years and never used a carbon steel pan until I forged my own and I love it. Now it’s the only one I use.
Watching you remove those fasteners was 'riveting'... sorry, couldn't help myself... lol I don't know how applicable this is but I have a Blackstone grill and what I did to season it was for the first few uses I'd scrape the grill clean, apply a seasoning oil for cast iron pan and then I'd let it heat for a few minutes until the bit of smoking stopped. After those first few times I now just scrape it cleab, and wipe on a thin layer of avocado oil every time I'm done cooking. It has worked really well for me.

The oven doesn’t harm the powder coating unless your heating over 500 degrees F
I wasn’t sure where the safe point would be but even knowing that I don’t think I’d want to use it in the oven with the powder coating. It was a fun project and I’m glad I took the time. Now I don’t have to worry at all about potential harm from the powder coating. Cheers 👍
You don't need as much heat to cook in that pan. Because it is thin carbon steel. In time your pan will look and cook as well as a cast iron skillet. You probably have one. You did a good job on the handle.

It is nuts. lol....so far I love it. I cook with cast iron pans usually. I find it similar. However, No teflon...none! @@Simplelittlelife

Carbon steel pans are the way to go. I have 3 pf them plus one deep style. I must ad mit I also have one of those honeycomb non stick pan but rarely use it
Typical, we add this value added powder coat you have to remove before use, then we charge you more. I haven't looked at steel pans yet, we have a pile of cast iron that will last us forever. Steel would be nice for our boat though.

Does the weld behave like the carbon steel or rust/stick differently?

What's wrong with the powder coat? will it offgas?
It's fine for a few minutes but when it gets too hot it will turn sticky. If you put the pan with food in the oven, and take it out with a towel, the coating will be stuck to the towel. Besides that, it will start smoking if it's too hot.
Yeah that was my main concern was the off-gassing. If I wanted to sear something and then bake it for a while I just wouldn’t like the idea of powder coating being baked in there with my food. Might be nothing to worry about but I’d rather just get rid of it.
