Ingredients:
200g flour
1/2 teaspoon salt
75g butter, cold
5 tbsp water
2 onions
200g bacon slices, from ethically raised animals
500ml heavy cream
3 eggs
150g grated Gruyère
1/2 teaspoon nutmeg
1/3 teaspoon black pepper
1/2 teaspoon salt
Cooking Instructions:
1. Mix flour and salt in a bowl.
2. Cut butter into pieces and add to the bowl. Rub the mixture with your hands until crumbly.
3. Add water and mix until it forms a soft dough.
4. Flatten the dough, cover, and refrigerate for 30 minutes.
5. Slice the bacon into thin strips and fry until crispy. Let it cool.
6. Slice the onions and fry them in the bacon fat until soft and translucent. Let them cool.
7. Roll out the dough, place it into the quiche tin, and prick the bottom with a fork.
8. Layer the onions and bacon on top of the dough.
9. Preheat the oven to 220°C.
10. Whisk cream, eggs, and cheese, and season with nutmeg, pepper, and salt. Pour the mixture over the bacon and onions.
11. Bake for 40 minutes on the lowest shelf.
12. Let the quiche rest for 5 minutes before serving.
