I found her method for grating garlic to be particularly repulsive. It's all that I can think about, despite the lovely puff pastry appetizer that I don't deserve.

Yes, two things. Identifying the type of cheese can really help those that do not understand cheeses, and how to use their different flavors and especially melting properties. Do that same dish with a say "Aged Extra Sharp Cheddar" and you would definitely not get a melt like that. Not to mention, with two strong cheeses like that, only us rats would appreciate it. The garlic technique is kinda wild, but at the same time, it also shows those who are watching, and my not be great cooks, that you can mutilate something and still make it work. Love the sauce. This is a beautiful recipe. The Chefs from the School of the Culinary Arts commenting, should really move to the back of the class room and remain silent. I'm going to add a comment that sort of coincides with yours--that is, I know so very little about cheeses but I know that I hate Feta and Romano cheeses, so my comment will be to ask what I could use as a substitute for the Feta that won't ruin the recipe and I was also going to ask what "cheese" she's using because I simply don't know anything about cheese and I'd really like to make something that looks this fantastic!
