    Omg 😍😍😍 I am from odisha... We also eat this red colour rice called sharda chaula.... And we do the same with the rice .... We ferment it overnight and have it in afternoon.... We call it "Pakhala".. it's the most favourite food of all odia.... We have a special day called "Pakhala divas" for it😍😍😍😍

    I live in Srilanka and we too have many overnight left over rice recipes. My fav is blending the rice with coconut milk, shallots, peper, jaggery, curry leaves, green chilli and lime. This makes a room temperature tasty highly nutritious porridge for Breaky.

      @@reenusukumaran987 previously all south Indians mainly kerala and tamil peoples are called madrasi. I am from kerala and people called me madrasi.
      In the beginning ie 1982 l fought with several peoples. Later I enjoyed now i am retired and all are my best friends..

    In West Bengal, we call it "panta bhaat". It helps in keeping the body cool in hot summer. We have it in breakfast (leftover rice from dinner) or in dinner (leftover rice from lunch). Its very popular and my ultimate favourite. Had it since childhood.

    West Bengal villages they call this "panta-bhat", they eat with fry red chilly, and raw onion or some have with green chilly also. I like to have " Panta-bhat" with "daler bora" or egg omlet, along with raw onion and red chilly fry. It tastes very good. It is cooling stomach and gives good sleep. I love it.

    In tamilnadu Chettinad family they add water on leftover rice then add the filtered boiled kanji after adding water it makes the fermented kanji more healthy and tasty

    This is made in Andhra Pradesh also. It is called chaddi annam. The water is called Tharavani.. We used to have this when we were very young. Even I take this in summer.

    The fermented rice water can be used to regrow hair. I haven't tried yet but it does make sense to me. Worth trying. Organic Jasmine rice smells amazing. Telling/talking sweet messages to it has been Proven to activate a very pleasant fragrance.

    We hv a similar process with ragi balls . We soak the remaining ragi ball in water, next day hv it with curd or butter milk. I guess it's essentially the same thing.

    Ma'am how do we know if the rice is fermented?, I have been trying this for a few days but when I check the kanji at morning I do not get a fermented taste or smell.

    Iodized salt is better, if you can get original Himalayan salt that is also iodized that’s better. Most of the pink Himalayan salt you get in the market are fake products. Look up the benefits of iodized salt please recommend that in your cooking as it will benefit a lot of people

    what is the difference between the black clay pot and the red clay pot? does it matter which of these 2 pots you ferment in? I only have the black clay one for making fish I bought in Kerala awhile ago, but I live in the U.S, so don't have access to purchasing any clay pots. Please answer if you know the difference. Thank you.

    this is like a regular breakfast of many of the tribes as well as village people of Chhattisgarh specially in BASTAR this kind of fermented rice is known as "mandh bhaat" or "bore basi" etc. Sometimes they also make the planet's best refreshing energy drink by sprouting and fermenting the paddy (Dhaan). That drink after having in the morning you can work all the day without getting tired. On the other side if it is taken more than it can make you sleep all the day 😂.

      We get two kinds of pots. One is the regular red ones and the other being black. It's not painted, it's a seasoned pot.
