Nice bowl. I'm wondering if it has cracked at all since you made it. Ipe is a beautiful wood but very tough on cutting tools with all the silica and if it wasn't dried properly at the mill has big problems dealing with the change in climate/humidity in other countries. How's it holding up?
Okay okay okay... so the question is, how long did it actually take you to grind away that material? and i won't ask how long it took to clear up that miniature Sahara, lol You did a good job and it turned out lovely, I have a few of those little beasts (those sanding/carving discs) at my disposal and think I will attempt this and make a gift or two for my mum. Thanks for the upload.
Nice job - but you're doing it the hard (and dusty) way. Have a look at getting some Arbortech power carving tools. Will make your life a lot easier, and I'd look forward to seeing what you could make with them.
The much easier, cheaper and faster way is to get a $10 carbide cup wheel from Harbor Freight for your grinder. This seems a little on the crazy side with sanding disks.
Yes, you could do that however you will get a glue line that will be clearly visible. If you are going to go with that approach I would add different types of woods to accentuate the glue line rather than hide it.

Believe it or not it took longer to clean up the dust. The whole project start to finish took four hours (including lunch). Thanks for the comment.
