Both are good and it tends to be situational based on matchup as well as up to player preference. VT1 is usually better vs characters with a projectile but both are very good and viable.
Ken is the best character ever in Street fighter. I'm so glad he is in Street fighter 6. I'll be using him always. I'll be number one in rank match. In June you shall see. I'm the best ever.
The problem is that their technique sort of works because shoto and capcom loves shotos, so you either have to level your execution to almost perfection in order to punish them accordingly or else you die to them by the same combo being spammed
