I went on a cooking tour in Trapani and cooked with chef Pino in his kitchen after spending the morning at the fish market on the ocean with him. It was amazing and the couscous was FANTASTIC! I plan to go again once the Covid ban has been lifted.
The way it is made the Sicilian couscous is very close to tunisian couscous / You have to know that even in North africa the couscous is different from a region to other .... the couscous is made from hole the territory from libya to atlantic border of Morocco
In south Morocco we have different ways of making Couscous....one of them is called " ifnozen" and it's made like this with a lot of olive oil and alfalfa leaves....but what makes this interesting is that its made with fish....something I never knew about even in the north where people eat lots of fish.
