    I went on a cooking tour in Trapani and cooked with chef Pino in his kitchen after spending the morning at the fish market on the ocean with him. It was amazing and the couscous was FANTASTIC! I plan to go again once the Covid ban has been lifted.

    The way it is made the Sicilian couscous is very close to tunisian couscous / You have to know that even in North africa the couscous is different from a region to other .... the couscous is made from hole the territory from libya to atlantic border of
    Morocco

    In south Morocco we have different ways of making Couscous....one of them is called " ifnozen" and it's made like this with a lot of olive oil and alfalfa leaves....but what makes this interesting is that its made with fish....something I never knew about even in the north where people eat lots of fish.

    couscous is the national plate of tunisia and all north African countries make it however the archeological facts and historians confirm its 100% Tunisian pre historic

      @@massinissaziriamazigh8122 there was no Algeria at that time !! it was discovered by Numidians who were in Algeria and west of Tunisia !! and Sicily took it from Tunisia and parts of Algeria since Sicily was under Aghlabid dynasty in Kairouan that included Tunisia and parts of Algeria but origins of Couscous u never say Tunisians or Algerian !! u say Numidians or Berbers or N A natives, archeological fings of couscous making were even enormous in ruins in Makther * Tunisia * the name was Maktharis an important city of Numidian kingdom after the fall of Carthage

    Tunisian couscous is the only one in North Africa made with sardines,octopus,stuffed calamari ,big fish ,in Jerba they do it with parsley....you need to travel and make a research....we colonized Sicily this is our Influence🇹🇳🇹🇳🇹🇳🇹🇳🇹🇳❤

      it was never from Morocco look it was discovered during the Numidian kingdom also the Italian one was brought by the Tunisian type since Sicily was under the Aghlabids dynasty in Tunisia , since when Couscous was Moroccan lol don't say that again they will laugh at you

      @@granda2126 it came from the atlas mountains the kingdom from the atlas mountains at that time was Morocco Marrakech and fez where the main cities back then and plus it wherent the Numibisns but the amazigh people who lived mostly in Algeria Morocco and Tunisia and also Libya Morocco always was the trade city people say it went from Morocco to the other countries via the atlas and we know we didn't colonize Sicily but we did colonize Spain and Portugal where couscous still is made

      @@granda2126 you know that couscous was made by Muslims Berbers kairouan was is Sudan so I don't know where you learned your history and carthage was in 149-146 BC destroyed by romans and was made way before way before couscous was. couscous was said to originate from northern Moroccans berbers and northern Algerians berbers between the 11th and 13th era at the end of the zirad dynasty and the begin of the almohads caliphate people who say it was made during the numidians is not supported by anything its just a theory the same as people who say it came from Italy or Spain and plus the empire of numidians didn't even last for 2 centuries. PS: the oldest recipe was made by a Hispanic Arab Andalusian.

      Arab tribes of North Africa had learnt preparing Couscous from us (Berber tribes). Arabs have othes special dishes like chekhchokha of Biskra (Algeria)

      There is no such a thing as arab tribes in the maghreb today, they are all arabised berbers or mixed arab-berber at most.
