Sicilian Pizza | Kitchen on the Cliff with Giovanna Bellia LaMarca

- These are two of my Sicilian pizzas. One is made with tomato, onion, and peas. The other is anchovy and onion. This pizza which is served at room temperature reminds us and our friends of the New York Philharmonic Concerts in Central Park which we joyfully attended every summer. Enjoy!
Recipe
Pizza Dough (makes 2)
6 cups all purpose flour
1 tablespoon Yeast
1/2 cup vegetable shortening
2 cups warm water
1 teaspoon salt
Pizza Condiments
Petite Peas
Anchovies
Fried Onions
1/4 cup Extra Virgin Olive Oil
6 large onions, thinly sliced
1 teaspoon salt
1/2 teaspoon dry oregano
Tomato Sauce
1/4 cup extra virgin olive oil
1 small onion, thinly sliced or 1/2 cup fried onions
28 ounce can Italian peeled plum tomatoes
1 can tomato paste
1 tablespoon sugar
salt and pepper to taste
small bunch of fresh basil leaves, rolled together and sliced
salt and pepper to taste

Did you use 1/2 cup sugar ?
I honestly cant remember but if thats what it called for I usually cut back a bit on sugar@@Patt12

The crisscross anchovy pattern is so charming.
Whenever I need to smile I watch your videos. Sometimes my wife asks me what I'm watching because I'm smiling so much. She doesn't get it, she just smiles at me, so you are making both of us smile. In case you didn't know, smiling changes a person's brain chemistry and remodels synapses. You are literally helping people make their brain a happier place.

Are you using actual shortening or butter? It looks yellowish. Just wondering. I work as a cook and would like to make this for my employer.

Thank you for teaching me how to make a pizza dough. So simple yet so amazing. My mother used to make it like you but i never got the chance to get her recipe. Now I have it once again. Giovanna, I'm so happy I found your channel. I'm from Siracusa and my wife is from Messina. We both make specialty dishes from our respective regions...especially something called susheddu from Messina and spedini from Siracusa. Now I can complement my dishes with pizza or focaccia. My Sicilian uncles ALWAYS fried the onions first. This was one of our traditional Christmas eve foods although I don't remember them using peas on the pizzas. Definitely peas in all of our tomato sauces!
Sicilians actually often put peas in tomato sauce and meat sauce for pasta. On pizza, on the other hand, I, as an Italian, have never seen them.

Doesn't sound good with peas. Much better in fried rice though.😊
Growing up in a Sicilian home I helped my nonna and mamma make these pizza's. I still make them. Not the only kind of pizza but one of the best. Buon appetito nonna.

7:07 I was laughing out loud when you said ‘not much’ and proceeded to drowning the pizza in olive oil.
I’m from Bulgaria and my grandma would do the same thing when she cooks, except with sunflower oil.
You need to be generous with oil because it greatly enhances any dish!
Be careful with sunflower oil, it's very inflammatory and greatly increases heart disease due to its high omega-6 content. It's a rancid oil.

I get the impression that Italians view pizza more like a type of bread by the fact that they care a lot about the dough, and make it a point to not overload the pizza with sauce/toppings

I grew up in Italy and my nonna and I never added butter, just olive oil, let's keep the calories down as much as possible! I sautee the onions without oil either or you can roast the onions in the oven, also without oil. I love roast or if you're short of time, microwave garlic, sweet and delicious! Great idea about the peas, thank you.

My rather homely knife is a knife with a great cutting edge used by shoemakers and electricians. I buy them from a saddle maker in Virginia; they are not fancy but they are very reliable!
