How To Prepare Waakye Without Leaves

    Ingredients:
    1 cup of rice
    1 cup of black eye beans
    1 teaspoon full Bicarbonate of soda
    salt to taste
    Method:
    1. Wash your beans
    2. Put your beans on fire
    3. Add your bicarbonate soda, when the beans just reach the boiling point.
    4. Allow the beans to boil for 10-15 more minutes
    5. Add your salt to taste and add your washed rice
    6. Add a little bit of water for the rice to cook well with the beans
    7. Allow to simmer through
    8. Open it after 10 minutes
    9. Add more water if needed
    10. Cook it a little bit more till tender
    11. Serve with waakye stew, shito and some gari
    Enjoy.

    Yes waakye cooked with bicarbonate of soda is better than using beet root.

    Just a question
    I see the beans were not soaked overnight before cooking. Will they still be soft after cooking them as shown in the video?

      Because where i am when i go to the store i only see baking soda so i would like to know if i can cook my waakye with baking soda?
      Will it be the same because am not too sure

      Bicarbonate of soda and Baking soda are the same just different terms. Not to be mistaken for baking powder which differs slightly.

      It lifts the colour from the leaves so the waakue comes out dark brown.
