Bruleé on!* Cooking time with better half: 30 mins (plus baking & refrigeration time) Chef 1: Ingredients: 5 large eggs ½ cup sugar 1 tsp vanilla essence A pinch of salt (optional) Procedure: Chef 1, you’ll first work on the eggs and Chef 2 will work on the cream! Crack the eggs and separate the yolks in a bowl. Add sugar, salt, and vanilla essence to the egg yolks, and using a beater whisk it gently until a smooth paste is formed. Hand this over to Chef 2! Once Chef 2 is done with cream, you’ll be in charge of pouring and baking. Divide and equally pour the mixture into 4 ramekins and place the ramekins in a bigger dish. Fill the dish with hot water ⅔rd of the way up to the sides of the ramekins. Put the dish (water bath) in a preheated oven and bake for 35-40 minutes at 160ºC/320ºF. The custards must be set with a little jiggle in the centre. Allow them to cool completely at room temperature. Then cover and refrigerate overnight or for at least 4 hours. When you take the ramekins out, let Chef 2 work on the sugar surface. Chef 2: Ingredients: 2 cups Heavy cream 2 tbsp sugar (for the top caramelized layer) Procedure: While Chef 1 works on the eggs, you will work on the cream. Place a pan over medium heat and add cream to the pan, do not boil it just bring it to a simmer. Once it simmers, put it in a beaker or a bowl and start adding it to the egg yolk mixture slowly. Add the cream little by little and do not forget to keep whisking the mixture the whole time until you have added all the cream to the egg mixture. Once you are done, put the mixture through a sieve so no lumps are left. Hand this over to Chef 2 for pouring and baking! Once the ramekins are out of the refrigerator, you will be creating the sugar surface on top! Pour 2 tbsp of sugar over each custard in the ramekin and evenly distribute it. Use the kitchen torch to caramelize or broil the sugar on high heat. Let it sit for 3-4 minutes. Your Creme Bruleé is ready! Here's an update on my Crème Brulee. I loved it. So nice and creamy and the "torched" top was awesome. But mostly I gave 2 of my ramekins to my neighbors and they asked if I could make some weekly for them. A good compliment!

What technique can we use for caramelisation, apart from the blow torch/broil method?
Deepti R make caramel in a pan then put it on top. It will harden easily.
I would recommend getting a blow torch. It’s pretty easy to use and they aren’t too expensive.
