    Those drying tables out in the sun; perhaps should also have some sort of bird & bat droppings shield?
    A tall angled A-frame w/fine mesh handmade & biodegradable netting - would be sufficient to adequately reduce risk of airborne contamination.
    Although such added infrastructure certainly will increase the cost of the product.
    So I would suggest you stop promoting mass production of sellable goods. And return to a village population maintained way of provisining of life.
    In the truly organic and truly earth-friendly fellow population maintain way of caring for the Earth instead of generating wealth for the wealthy via mass populations over-consumerism-ing the Earth to the point of a naturally out of balance - climate changeing mess. - all for the money.
    I know it seems like a lot of work for an entire Village population to provide for themselves this way with the alternative is a self-inflicted massive population of generating personal wealth from a free-of-charge nature and in the end you're left with a scientific mess of problems to try to solve - all for the money

    hire a chemical engineer to cut down the process. you can achieve the same result at half the time and half the effort.

    How many kilos of sugar that can make in1 liter or gallon of coconut wine or juice?

      Sugar Recovery is around 15%. For 100 litres around 15 Kgs sugar
