When I watched the initial part I said to myself this man uses many traditional Japanese carpentry techniques. Then at 5:00 the truth revealed he was a carpenter originally. The prides, skills, and dedications of Japanese people of whatever their profession are infectious. There are much more than what meet the eyes designing and building a Yatai like this. The steel chassis design and construction must be one that was developed and improved over generations to be strong, but yet lightest possible, like the rest of the Yatai as it has to be moved, sometimes over a long distance daily without constantly requires repair. Just the thoughts that went into the design and construction to withstand rain, and worse strong wind during inclement weather are not trivial. The old steel parts sets off beautifully against the exquisite carpentry and, in a small way, Japanese architecture and aesthetics.
If he wasn't running a food stall, he would definitely be a wonderful carpenter or jack of all trades. By the way, I really like his hairstyle. Can anyone send me a video on how to do the same hairstyle?
This guy is like some manga Onisan that can do everything as long as he says "Ganbaru!" I mean ffs he cooks, builds, funny dude and in those close camera angles you can see his eyes, they're bright and full of intelligence. Wish you the best man

Japan is amazing. Even building a Yatai requires meticulous art. In my country, roadside stalls are dirty and shabby, plus with unhygienic food handling.
Should really coat that frame in rust conversion spray. Don't want to build that whole gorgeous thing and have the frame rot out from under it in a year or so.
We cut the video quite short, so it doesn't show the whole process of him building the stall (which took him several weeks). So I am sure he gave the whole thing a weather resistent coat (paint too) at some point!
WOW that looks fantastic. I'm actually very curious when the opening is. I would like to be among the first guests, but it is difficult to get to Japan from the Netherlands. Why didn't you give the chassis a makeover?

Yes, a lot of Yatai are used over many many years, and passed down or sold to next generations, so it's not an everyday thing to built a new Yatai!
