In Spain we generally use 3 types of olive oil: The extra virgin olive oil to dress salads, the virgin one for sauces, creams and such, and lastly the "basic" olive oil is used to fry/deep fry stuff. Using the extra virgin for that would be a waste! That oil reaches a lower temperature point so your food could not get crispy, just mushy... Also, most of the essence of the oil would get killed by the high heat!

Never seen grilled sandwiches cooked in a frypan before until I went to the US. I love the "toastie" makers that are like sandwich presses but with grooves and ridges around the edges and middle that seal your sandwich on all sides and down the middle diagonally so you can divide it easily without losing your fillings.

Produce costs differently in different areas around the world, even in different parts of the US, due to season and ease of availability. For example, tomatoes are a dime a dozen where I live, but I also live in an agricultural area where they don’t have to ship tomatoes from long distances when they’re in season, and they actually have to compete with local farmer prices. I’m going to guess these guys are in LA, where the cost of living is already ridiculous, but even aside from that they have to spend extra money shipping the tomatoes since they’re likely coming from out of state, they’re likely to have to make up for some lost product because some may have gone off along the way, and depending on when they actually filmed this episode (sometimes they film them a few months in advance, but we at least know it was a few months after March) tomatoes may have still been out of season.

This one time I mistakenly held this scorching hot pan for a fraction of a second before dropping it, and my grandma turned around and picked it up as if it wasn't hot! and yes, I got my fingers burnt really badly and developed 2 blisters as well, and her fingers were perfectly fine!. Those 2 following week, I couldn't take down any notes at college...
I would never be able to choose between either of these. They both look amazing in their own way. Nothing can beat a good Nonna's touch, but Frank's way looks so thought out and amazing too. And his tomato fondue seems like a great thing.

Never seen grilled sandwiches cooked in a frypan before until I went to the US. I love the "toastie" makers that are like sandwich presses but with grooves and ridges around the edges and middle that seal your sandwich on all sides and down the middle diagonally so you can divide it easily without losing your fillings.

Produce costs differently in different areas around the world, even in different parts of the US, due to season and ease of availability. For example, tomatoes are a dime a dozen where I live, but I also live in an agricultural area where they don’t have to ship tomatoes from long distances when they’re in season, and they actually have to compete with local farmer prices. I’m going to guess these guys are in LA, where the cost of living is already ridiculous, but even aside from that they have to spend extra money shipping the tomatoes since they’re likely coming from out of state, they’re likely to have to make up for some lost product because some may have gone off along the way, and depending on when they actually filmed this episode (sometimes they film them a few months in advance, but we at least know it was a few months after March) tomatoes may have still been out of season.

Aren't all grandma's like that. This one time I mistakenly held this scorching hot pan for a fraction of a second before dropping it, and my grandma turned around and picked it up as if it wasn't hot! and yes, I got my fingers burnt really badly and developed 2 blisters as well, and her fingers were perfectly fine!. Those 2 following week, I couldn't take down any notes at college...

Yeah lol. My family just tosses some buttered bread onto a skillet and puts some processed American cheese between the slices and that's a grilled cheese. I saw the mozzarella and ricotta from the grandma and was like wait what do you need that for?
That's the way to go to be honest... These chefs are over-complicating a sandwich which is best served with simple ingredients in my opinion.
