  • Yakhni and Rogan Josh are the two pillars of Kashmiri cuisine. Yakhni has a base of curd - water even if it is added for cooking is eventually dried off. Authentic Rogan Josh in contrast is ghee-based, with the characteristic red colour coming from the use of liberal amount of Kashmiri red chilli powder and ratan jot which is root of a plant having a deep red color.
    Of course, the original Paneer Rogan Josh fiery gravy had to be tamed, so that it didn't end up taking too many casualties in the sultry hot weather of North Indian plains such as Delhi. This week’s recipe is the queen of all vegetarian Kashmiri taste buds.
