You gotta love Martha, she isn't afraid to get up close and personal with the La Caja China, of which I do own one. The internal heat is very high so you must have two people to flip the pig over! This box is a slow cooking wonder.Several hours will pass before the end result, however a little patience goes a long way. Your tummy will thank you, you will have new friends who will speak your name while chewing! lol. Three thumbs up!

They have been cooking pigs like this in Hawaii for a long time. The box is just a hole in the ground.

Hi, very illustrative video. I'd like to ask what model of caja china was used for that 45 pound pig? Thanks and regards.

+bracsim Right cause he worked his A$$ off for 20+ years in excellent restaurants then decided to cash in as running the line when your 50+ years old is literally back breaking labor. Study a bit before dropping the hate.
