Chicken Fricase and Pork Carnitas in Caja China

- The way to feast, Cuban Style:
Not only can you cook a whole pig in a Caja China ( China Box), you can cook anything outdoors. The invention of Roberto Guerra and most noted by a Throw Down with Bobby Flay, the Caja China is a must have for most Cuban- Americans, especially during the Christmas holidays.
Chicken Fricassee:
Chicken thighs, skinned, chunked and deboned. Seasoned with Badias Complete seasoning. Fried until browned.
Prepare the Sofrito ( watch my video).
Incorporate the chicken with a can each of diced and crushed tomato.
Cook for 30 min. and add cubed potatoes. Add beer or white wine.
Cook until potatoes are fork tender and sauce is creamy. Add olive/pimento salad and olive oil. Serve with white rice.
When cooking with the Caja China, you don't have to precook the chicken.
Pork Carnitas:
Boston Butt, cut in chunks, marinated with Badias Complete seasoning and Mojo Criollo ( Spanish marinade). olive oil in a pot or in a pan in the Caja China. Cook until fork tender. A pot with lid will cook faster. Cooking in the Caja China will be more fun.
