    I tried researching this a couple of years ago, with not too much luck. No one else's videos were as informative as yours is, Joe. Had this video existed in 2010, I'd probably already own a La Caja China!

      You know Dan, I thought the same thing.
      There is even a video out there with Bobby Flay and it is not very informative about the product.
      Just doing my incredibly small part to show off what I think is a cool addition to the cooking arsenal.

    Never heard of a LA Caja China, Joe I have heard of roasted Pig. Love that marinade.... the fruit juice and garlic injected into the piggy, WOW. Looked pretty darn good.

    As a firestarter same bound style charcoals but ball up paper towels soaked in vegi or corn oil. Nice pig dude. From us Miamians.

    those boxes look amazing I've been wanting one(along with a lot of other thing too). on their website, they have a smoke gun accessory. I loved when the mom said to her son "that's what real food looks like"! awesome pig Joe, you rock.

      I have seen the smoker attachment, though I am not sure how well it would work as I have not seen anything posted anywhere as to its effectiveness.
      The taste of the roasted pork was a big hit though.

    Man, I wish I was there to join in on the pig roast. That whole pig looked phenomenal Joe. I gotta get one of those roasters from La Caja China. If you are able to make it to Austin in January, we will definitely have a pool party and roast a pig in your honor brother! Thanks for the shout out!

      We thought that you would enjoy the roasting of the hog, a very cool way to cook one for sure.
      So far it looks like we will be in the Dallas / Fort Worth area right after the start of 2015 - we will be sure to have updates. As you know, we like to travel to where the food is awesome!

      Hye RootBoy - Fire On The Box is right.
      The 4 to 4 1/2 hour cook time is what sold me on this in the first place and I can say it is pretty much spot on. The only thing that makes a difference is who long it takes to crisp up that skin after the turn.
      Damn that skin was like crack candy!

    Thanks for the cleaning tip about leaving the fat to solidify! Any thing else I should know regarding clean up? Cooking our first pig on the 4th of July. Thanks for the great instructional.

      Greetings Al.
      Bravo on your first pig roast, your guests are going to dig the show and the food.
      After removing the solid fats all you need to do is use warm soapy water to clean the box, then fully rinse it.

    Ahh cool video! We call those Cajun Microwaves down here Joe, and they work fantastic! One of the Frog Bone guys I know, makes them. The whole hog looked fantastic, and I know that Cajun rubs was excellent on it!

      Right on Keith - porky's got some good eats on that skull.
      I can tell you, this box really does what it says, though most of the videos online leave a lot to be desired.
      Yes, the package arrives yesterday, was going to give you a thanks on FB.

    TJ great video! I researched for videos too, you hit the ground running with this brother! Very nice, however it's strange, yours was the first video to pop up, from 4 years ago, you da man! The Caja China can be intimidating to some. But you got the bases covered!!

    Would it be a good idea to foil the belly side so it doesn't burn?

      Placing foil would increase the roasting time and also decrease the flavor.

      Depending on the area, sometimes a whole pig can seem a bit pricy, especially these days.
      It was worth it though, makes for an awesome meal and a good show for the guests.

    So would peaches be a good alternative to pineapple on most dishes? Or would doing without hinder the desired flavor?

      Yes indeed, you can sub peaches for pineapple.
      Just be sure to sub fresh for fresh, ext.

    I have 2 of these boxes. You need the larger Box, Box #2. You have Box # 1 for pigs under 70lbs. That pig you had was over 70 lbs for sure and almost didn’t fit in the box.
    No way was it completely done in 3 hours.

      The pig we purchased for this cook back in 2014 was just about 70 lbs if I can remember that far back.
      It was a tight fit, but cooked up real nice in the four hours they recommended. We did flip it at about the 3 to 3.5 hour mark.
      Still using this after nine years, a great product.

      If I can remember correctly this one was between 60 and 70 pounds, which is about the largest you can get in this model.

      Hey Chad, have to say that the Caja China is a great cooker. Being able to roast an entire pig in less than 5 hours is where it's at.
      The other stuff I have is going to eventually get a review on video.
      The smokenator is a cool item for the kettle, though to start off you can use some bricks to line off one portion of the kettle for a low & slow indirect cook.
      The PBC is very cool, been getting the hang of that one. Def worth the $$.
      Also look into a WSM - fantastic cooker.
