    Umm you obviously don't realise that all flavouring extracts are made with alcohol, etc; vanilla.

      It looses the alcohol by the end time. And no not all extracts are made with alcohol. Some water n glycerin or propelyne glycol

      Yes he gave his child lemon flavored alcohol aka lemon extract if and only when it is baked into foods that’s when the alcohol is evaporated and the flavor is left behind.

      @@ladyvessel8197 Propylene glycol is extremely toxic and cannot be metabolized, super bad for your health even in small amounts. It seems to be in every lotion and lots of foods, so I avoid them. It is essentially antifreeze. The alcohol is a preservative and does not dissipate all the way out during cooking unless it is lit fully on fire, and only foods lit on fire such as “flaming deserts” cook out all the way. It’s an old wives’ tale that the alcohol cooks out in recipes that are simply baked , boiled or steamed, as about 2/3 of it remains, which for me would be a concern in recipes where a large amount of alcohol is added. A tsp of extract isn’t a concern at such a small amount. I’m not sure if glycerine has issues but I know that glycerine in the mouth prevents your teeth from absorbing the minerals in foods they need for strength and hardness, so using it in custom made toothpastes is s problem, and I do make my own. For people who don’t want to use any of these three things for cooking extracts, you can also put these essential oils, like the lemon zest, directly in sugar and let it sit for a few months, shaking it once in awhile. Maybe 1-2 drops food grade essential oils in a cup or two of sugar might work, too, but they are not ingestible at a high concentration so you’d have to know what you are doing. I know that people make vanilla sugar by putting a vanilla bean directly into a couple of cups of sugar and shake it every few days. Spices and essential oils are considered an “isolate” unless made with their other whole food components intact. The other components make them safest to ingest and slows down the amount of essential oil you eat, especially if the fiber and enzymes are intact and present. As isolates though, an essential oil all alone, extreme moderation is needed, and a tsp of liquid extract in a whole recipe means there is only about 1/10-1/20 of a drop of the essential oil in the whole recipe which is usually 6-10 servings on average. That’s usually fine for most people.

    i made mine in January 15 of this year, i believe, and its been sitting there for almost a year !! so excited to open it and use it, i love lemon deserts so im very excited.

    people worried about the vodka need to remember all extracts have them and using them in recipes while cooking will get the alcholic part out

      Or have a visual impairment. Fortunately, now I have a magnifying glass on my android. My glasses don't read microscopic. I have to use it when getting names off cosmetics (tiny label at bottom).

    Why are people commenting wondering if alcohol can be substituted? You're not gonna get your entire family pissed up at the dinner table because you used a bit of vodka in your extract

      JAHurley41 People always have sumthin to say with extracts, coz it has a TINY bit of alcohol, it's smaller than tiny , I see it all the time on any cooking thing. It always makes me laugh.

      Some religions don't allow alcohol, some people prefer not to drink, some can even be allergic to alcohol. It's more common for people to find alcohol replacements now than before, even with the big health kicks and people stop drinking altogether, even in food.

    Oh my god. She tried a DROP of the stuff. She didn't sit there and chug it! Everyone needs to calm down. Yes it's vodka but it was barely anything. She will be perfectly fine.

      They used to rub alcohol on their gums when teething also. All things in moderation, using common sense. We made hot toddies for my friends sick son when he was 12. Sipping slowly, it helped cure his sore throat.

    May I just remind people that alcohol is not evil? When I was 13, I would be on vacation and my mom would let me have a wine cooler. That's what kids need growing up. Americas age to drink is too high. It's the main problem when it comes to alcohol poisoning. Also, when I was really sick, my mom and dad would give me a tablespoon of brandy to clear my sinuses. Alcohol is not evil. It's the people who abuse it who are irresponsible.

      So true. I come from the Caribbean and when I had a stomach ache as a young child, my dad would give me a tablespoons or two of gin to help. It didn't turn me into an alcoholic. Alcohol is way too stigmatized for kids so when they can legally drink, they do too much and realize that it isn't all that special.

      Elizabeth Leaf I have to agree, if the drinking age were lowered it would be better monitored and not so stigmatized, i'm 19 now but i have always cooked quite often with alcohol, ive never drank much , maybe a glass of wine at special holiday dinners, but it's frustrating how i have to get somone 21 + to get what i use to cook with on a regular basis

      Don’t be afraid of sugar-that’s a racket. Carbs are the only food group that can make stem cells, and we are dead without our stem cells. Just stay within moderation and always eat protein first. Protein stabilizes blood sugar. You can learn more from some great books about it, like “Glyconutrients, Sugars That Heal” and Miracle Sugars”. There are a minimum of eight that we need. Sugars are no different than water-have you ever heard of water intoxication? Too much water can kill you, just like is has many people, and not because it was contaminate, it was because of drinking too much in a short period of time. This is the same with our valuable, very valuable, lifesaving sugars. Moderation, and eating in order, not out of order is what counts. You will die from not enough and you will die from too much, just like steering off of either side of the road when driving. I get so upset at these sugar-defamers. Don’t fall for it. MIT calls the eight essential glconutrients (sugars) “the missing food group” because without the stem cells that ONLY they* can make, we have no immune system at all. None. Hope this helps. Oh!     After sieving where do you keep your extract? Fridge or cupboard? And how long can it be kept for?

      its best to keep it in an amber or dark colored glass bottle. put the lid on tight and keep it in the cupboard (preferably in a cool place but it does NOT have to be refrigerated). homemade extracts usually have a shelf life of 6 months - 1 year because the flavoring can be denatured from the alcohol after awhile (except vanilla and some other robust extracts that can actually mature).

    The alcohol gets cooked out when you use it for baking, so technically no alcohol will be in your body! Depending if you baked it well enough, but if you under baked it I am pretty sure there will still technically be alcohol in it.

      It's a substitute for lemon peel/zest when you don't want to run to the store to buy fresh lemons. One teaspoon lemon zest = half teaspoon of extract

      The alcohol is what extracts the oils from the peel, water won't do that and can grow mold.
