    이제 막 연어 잡게 되면서 본 영상중에 시간이 최고 오래 걸리지만 왜 저렇게 해야 되는지 이해가 가는 영상이에요 . 찍느라 수고하셨습니다!! 정호영? 쉐프님 가게 부장님이랑 뜨는방식이 비슷해서 더 집중해서 봤어요 ㅎㅎ

    저는 벤쿠버에서 17년정도 셀몬유통을 하는 사람입니다. 여기서는 팜셀몬 그러니까 양식용연어에 발암물질이 있다고 매년 티비에 나옴니다. 연어 양식에 문제가 엄청 많습니다. 문제가 되는건 사료, 청결,자연환경 그리고 병입니다.
    연어살의 오랜지색은 사료로 염색을한거구요. 원래색은 하얀 허연색입니다.좁은지역에서 몸집을 불리기위에 호드몬이 든 사료을 먹이구요.가끔씩 염색이 잘 안된 연어가 들어올떄가 있는데 보면 절대 먹지 못함니다. 심할때는 10마리중에 2-3마리가 카도아(병명이 정확하진 않네요)라는병에 걸려있는걸로 알구요, 거의 모든 일식집들이 법으로 한번 얼려야 하는데도 병이걸려있던 말던 이뿌게 다듬어서 그냥 후레쉬로 사시미가 나갑니다.부드러울수록 병이 심한거구요 싱싱하고 건강한 셀몬이라면 살이 무지 탱탱합니다. 많은 캐네디언들이나 이민자중 지식인들은 사까이 셀몬 그러니까 자연산 와일드 셀몬만 먹습니다.저도 마찬가지구요. 저도 어렸을땐 연어을 맛있게 먹었습니다. 하지만 이쪽에서 오래 일하다보니까 병든셀몬을 입에 넣었을때 구역질이 남니다. 한국에 연어가 들어간지 얼마 안되서 아직 이런 내용들를 모르시고 드시는거같은데 양식용연어는 절대 좋은 음식이 아님니다 .

      칼이 안드는게 아니고 정석 산마이 오로시네요. 연어같으면 다이묘로 가도 되지만 산마이가 더 익숙하신 분들은 연어도 저리 작업하십니다

    what was sprayed on it? and why does it need to be sprayed with that liquid, then sprinkled with salt afterwards?

      bojji catama i think it was water and then sprinkled with salt afterwards to cure the salmon :)

      bojji catama It adds up more taste and texture, otherwise it’s too bland. Also, dry seaweed can be used to cover it up and add more flavor.
