That lentil puree tip is gold! I often make a lima bean soup that needs to be thickened so I usually use some of the lima beans, but then I'm left with a soup with 30% less lima beans. From now on, I'm going to use lentil puree instead! Thank you!!
I’ve been successfully cooking lentils WITH tomatoes 🍅 AND vinegar in my instant pot. I add other vegetables along with sautéed onion and garlic then cook on high pressure for 3 or 4 minutes.. Let the IP depressurize naturally for 15 minutes and everything is cooked perfectly. Nothing has been undercooked, just tender & delicious. BTW... great video!!!!!
tootstoyou1 Maybe it can work cuz they're so small, but I tell ya, one time I cooked black beans with tomatoes in a pressure cooker for HOURS cuz they never softened... Finally I researched and learned this rule... The acid's definitely not a good idea, even if lentils are more forgiving than bigger beans!
Yeah the lentil soup I make with my instant pot I use a can of diced tomatoes. The pressure probably changes how it cooks. My mom tried using a can of tomatoes with her lentil soup that she cooks with a normal stovetop pot and she had trouble getting the lentils to cook.
@@debras3806 That may depend on the beans. I once cooked white northern beans with lemon juice added in my rice cooker to check the claim surrounding acid. They came out just fine. As for lentils, I regularly prepare red lentils in the rice cooker with spinach and lemon juice in order to simulate my favourite dish of sorrel with mashed potatoes. They come out great and all I have to do to puree them, is stir them a bit. I don't even need a blender.

The claim that lentils will not soften when they are cooked with tomatoes makes no sense to me. The question never occurred to me. Of all the things I cook, lentils are just about the easiest, fastest and least demanding.

I made my lentils in the slow cooker tonight and they were so much better than boiling. They are just not watery, didn't say mushy, but not watery in the slow cooker. Cover and in about 3 hours with half pound, they are perfect. Nothing like peppers, onions, tomatoes in the slow cooker with them and served it on white fully rice. Best meal this week.
Okay, when you first mentioned what a great recipe lentils and rice is, I thought yeah, right, two bland foods together. Can't be that great. Well, tonight I needed to cook something and I had some wild rice and lentils on hand, so I thought I would go ahead and make the recipe, knowing that I would probably not be impressed. I was wrong, very wrong. Lentils and rice will be a staple at my house from now on. So delicious. Looking forward to making it again. Thanks for sharing that.
you may make it a bit more interesting. while the rice and lentils are cooking away on the side make a tempering. a little oil in a pan, add some cumin seeds. add 1 small onion 2-3 flakes of garlic, 1 small tomato and cook till the tomatoes are a bit soft. add finely chopped carrots and spinach to this. add just half a cup of water and cook till the carrots are tender. once the rice and lentils are cooked add this whole tempering to the pot. mix it well and lastly garnish it with coriander leaves. instead of carrots you may add other veggies of your choice like pumpkin, beets, gourds of any kind except bitter gourd as it will turn the whole pot bitter. you may even add celery, any kind of dark green leafy vegetables, zucchini / courgette. Try it. Its both delicious and healthy. you may have a fried pappadum on the side just to add some crunch.
when I was traveling all over Turkey during summer of 2019 for 22 days, everywhere I went, I was looking for lentil soup, so good! Turkish chef Refika cooked her lentil until it's ready, then add salt. She added some lemon juice + olive oil when serving it.
I cooked lentils with quinoa a couple of days ago. It was so good that I ate quite a bit before the rest of the meal was ready. So good! Don't forget to add chopped onion tossed with a bit of oil beforehand.

I'm an RD in training, there is actually no such thing an an incomplete protein, incomplete amino acid profiles do not form what would be called a protein. What is true is that plant foods are typically lower in some amino acids as compared to animal sources such as leucine etc however this would only be an issue if you only consumed one specific plant food and nothing else. Lentils are a great protein source.
I'm confused, I'm a retired nurse, I took a nutrition class back in the late 70's I remember that plant proteins did not have all the amino acids to make a complete protein. One has to pair beans or legumes to grains to make a complete amino acid chain to form a complete protein for muscle building.
@@mariasullivan4052 you can perform a quick Google search and it will say the same thing, a sequence that is missing amino acids will not form a protein, that's biochem 101 / organic chemistry 101. The whole incomplete protein thing is a misconception, a notion spread mostly by cosmo magazine and other pop news, no scientific literature uses that terminology in reference to non animal sources of protein etc. The basics of it, proteins are made up of amino acids, if amino acids are missing, a protein can not form.

My mom taught me to add a couple of bay leaves to the lentils while they simmer. They add a great dimension, along with vinegar at the end. Great video with a friendly, upbeat, hunky chef!
@@4977abc, I have never tried it or had it with anything but apple cider vinegar, so I don't know. I'm sure each type of vinegar adds it's own signature, for example, balsamic sounds like it would be good but I really like the flavor of the ACV! Try a tiny fraction of a spoon of vinegar with with a bite of lentils. That way if you don't like it, the whole pot of lentils isn't ruined. Also know that a little goes a l o n g way!

If you've got old dry lentils or beans, or you're at high altitude (where the boiling point of water is lower), adding a little baking soda to the water will speed up the cooking time and help the pulses soften properly. I use a teaspoon for a kilo (about 2 pounds) of dry beans or lentils. It also makes some of the nutrients more bioavailable.

Tip: Soaking the lentils for a few or couple hours before cooking decreases bloating and gas compared to when I've cooked them straight up instead--substantially--for me.
That never mattered for me unless the legume was a bean. I stayed in Mexico for a few months and spoke with some ladies working in a cafeteria. They showed me how to make refried beans so they won't give you gas. Less than half a teaspoon of baking soda is all it takes, but it seems that biochemistry doesn't work in my favor when i need it to. 😳

I add diced onion, carrots & diced celery when I cook mine and use vegetable or chicken broth rather than water. I use them for main dish or side dish and makes a great breakfast. I haven't tried the bread yet but intend to soon.

Yesterday I came across a lentil recipe that is brilliant - 1 cup red lentils blitzed with 2 cups water, dry-sauté the batter and make flat breads! Fluffy and delicious. They are supposed to come out round but mine came out looking like Australia, but what the heck.
I prefer to add salt later, because boiling any legumes in salty water tends to toughen the skins, as you claim acid does. Acidic elements, on the other hand, really heighten the flavor of lentils, which is why many European and Middle Eastern recipes call for vinegar, lemon and/or tomato to be added to cooked lentils.
My favorite thing to do is making lentils with Ham and bacon mixed in. Put the Ham and bacon in at the beginning with about a half cup more of water and don't add any salt. The ham and bacon will salt and flavor them really well. I purposely OVER cook them to make them mushy on purpose. After which add a little chicken stock and let them come back to a simmer. Viola! Ham and Lentil soup that taste amazingly like split pea and ham soup but better! I find it more rich in flavor than split peas.

I use lentils when canning stews. You can not can with flour, milk, or cornstarch so I use lentils, when they get mushy they act as s thickener that helps you give the stew a gravy consistency
Try using a splash of Tamari instead of salt and take a medium sized carrot and slice it (about 1/2 " thick) and cook. Then serve the lentils over the brown rice. Its delicious !
I love that stainless steel kitchen sink with all of the windows and that cool copper pipe pot & pan rack! And thanks for the tip about not putting any acidic things in with the lentils until they are soft, I didn't know that.
You can purchase those sinks at restaurant supply stores. My sister and I made a pot rack from galvanized, threaded steel pipe from Home Depot and spray painted it black. It turned out great. I believe the copper pipe would have to be soldered. I watched a youtube video about Tracy Porters Kitchen and they used the commercial stainless steel sink in their farmhouse to save money. It looked awesome.
So now I know why my Mom always added chopped tomato, onion and cilantro at the end, when the lentil were cooked, never at the beginning! Thanks man, Sopa de Lentejas down south here in Mexico is the BOMB! :)

I have eaten lentils since the 1970s and we’ve always soaked them. Originally it was to make them less farty! We would throw away the farty water, and then cook. Now I’m really old, I find it’s really important for easier digestion. Also we were always told to not add salt at the start of cooking because it keeps the lentils or beans dry. What are your thoughts on these points? I have lentil and bean sprouts I make at home. Wonderful with everything. Keep up the good work by the way. just wanted to share a recipe for lentils. In India even split mung beans or split chick peas , pigeon peas are also referred to as Dal or lentils. this recipe calls for split chickpeas or Chana Dal as it is understood in Indian stores. Wash and soak 2 cups of this Dal for 2 hrs. then cook with just enough water to cook the Dal through but still hold its shape. drain all the excess water ( dont discard it though as it can be used for soups). once the dal is cooled blend it with a handful of freshly grated coconut, a cup of jaggery (sugarcane molasses) or ordinary sugar will also do. half a teaspoon of cardamom powder and a teaspoon of fennel powder. mix it well. keep aside. now knead some whole wheat flour into a soft dough with just flour, water and salt. 1 cup flour, half teaspoon salt and just enough water to knead a soft dough. make about 6 portions of this dough and roll them out to a 6 inch diameter. put the Dal stuffing in the middle of this and fold the sides of the dough over to completely cover the stuffing. now very gently roll this flat like a pizza base. heat a skillet or a pan and cook this flat stuffed bread - if you may call it - on the skillet on both sides till you see brown spots. smear some Ghee (clarified butter ) on the surface as you flip it over on the skillet. this takes just about a minute to cook on both sides. This is a delicious way to enjoy dals as a desert. In India we call it "Puran Poli" there are a lot of youtube videos on how to make Puran poli. This recipe is by far the easiest. by the way the Rice and lentils recipe is the best food when you are down with cold or fever. In India we call it Khichdi. It is the absolute comfort food. Easy to digest when your system is down and still gives a lot of strength to recover fast from the sickness.
In Slovak cuisine, when cooking lentils, beans, and peas, we don't add salt but a small peeled onion and 1-2 cloves garlic. For beans plus 2 bay leaves. When done, add a soup spoon of butter, salt. When cooler, add yoghurt or sour cream (peas: sprinkle with fried onions or bacon). Pure heaven. Serve with wieners or kielbasa.

You are right about not missing meat if you eat lentils but the need to combine foods to get a complete protein has been proven to be false. We retain nutrients and combine them at a later time. No need to concern oneself with doing it meal by meal. Our bodies are truly amazing.
Another way to cook them is to soak overnight, rinse, toss them into a rice cooker or covered pot, add enough cold water to come up even with the lentils and cook. Takes about 15 minutes in a rice cooker. This works great, too, if you add millet at the beginning.

@@qualqui No Joe. Rinsing lentils or better - soaking them and then rinsing before cooking removes some of the dirt and anti-nutrients such as physic acid. It's rice that can lose nutrients while rinsing, although more so with white rice.
Yeah, I was wondering why he didn't rinse them. My mom and my grandmother always rinsed them before cooking. You definitely want to sift through them for hard debris like little pebbles and such which can be in there.
Just cooked 250g red lentils to use up my fridge and pantry leftovers before the new food arrives. Sauteed 4 onions and garlic in butter and olive oil. Added garlic, pink salt and a chicken cube. Boiled the lentils separately to avoid the froth getting into my soup. Added both together with filtered water. Stripped the leftovers from the chicken carcass and simmered. I threw in a few frozen peas for colour and a few diced potatoes. Have to say it was both delicious and filling. I would rather have had celery and carrots but I managed a healthy meal without wasting a scrap of food

I'm confused, I'm a retired nurse, I took a nutrition class back in the late 70's I remember that plant proteins did not have all the amino acids to make a complete protein. One has to pair beans or legumes to grains to make a complete amino acid chain to form a complete protein for muscle building.
@@mariasullivan4052 you can perform a quick Google search and it will say the same thing, a sequence that is missing amino acids will not form a protein, that's biochem 101 / organic chemistry 101. The whole incomplete protein thing is a misconception, a notion spread mostly by cosmo magazine and other pop news, no scientific literature uses that terminology in reference to non animal sources of protein etc. The basics of it, proteins are made up of amino acids, if amino acids are missing, a protein can not form.
@@mariasullivan4052 The idea of protein combining is from the 1954 book "Let's Eat Right to Keep Fit". The ideas are out of date . The body has an amino acid pool and proteins are being broken down and synthesized all the time.

Drained & rinsed canned lentils go great in spaghetti sauce in place of ground beef. They also make great sloppy joes.
That's exactly the way I make my pasta sauce. Delicious!
They go good in/with about anything! I must admit, however, I have NOT ~ nor do I intend to ~ put them on top (or in!) anything chocolate! ;)

My mom taught me to add a couple of bay leaves to the lentils while they simmer. They add a great dimension, along with vinegar at the end. Great video with a friendly, upbeat, hunky chef!

@@4977abc, I have never tried it or had it with anything but apple cider vinegar, so I don't know. I'm sure each type of vinegar adds it's own signature, for example, balsamic sounds like it would be good but I really like the flavor of the ACV! Try a tiny fraction of a spoon of vinegar with with a bite of lentils. That way if you don't like it, the whole pot of lentils isn't ruined. Also know that a little goes a l o n g way!

If you've got old dry lentils or beans, or you're at high altitude (where the boiling point of water is lower), adding a little baking soda to the water will speed up the cooking time and help the pulses soften properly. I use a teaspoon for a kilo (about 2 pounds) of dry beans or lentils. It also makes some of the nutrients more bioavailable.

Tip: Soaking the lentils for a few or couple hours before cooking decreases bloating and gas compared to when I've cooked them straight up instead--substantially--for me.
That never mattered for me unless the legume was a bean. I stayed in Mexico for a few months and spoke with some ladies working in a cafeteria. They showed me how to make refried beans so they won't give you gas. Less than half a teaspoon of baking soda is all it takes, but it seems that biochemistry doesn't work in my favor when i need it to. 😳
Yes! I am prone to bloating with all legumes and even grains like oats! So I soak all of them and it helps so much!!

I add diced onion, carrots & diced celery when I cook mine and use vegetable or chicken broth rather than water. I use them for main dish or side dish and makes a great breakfast. I haven't tried the bread yet but intend to soon.

Yesterday I came across a lentil recipe that is brilliant - 1 cup red lentils blitzed with 2 cups water, dry-sauté the batter and make flat breads! Fluffy and delicious. They are supposed to come out round but mine came out looking like Australia, but what the heck.

I prefer to add salt later, because boiling any legumes in salty water tends to toughen the skins, as you claim acid does. Acidic elements, on the other hand, really heighten the flavor of lentils, which is why many European and Middle Eastern recipes call for vinegar, lemon and/or tomato to be added to cooked lentils.

My favorite thing to do is making lentils with Ham and bacon mixed in. Put the Ham and bacon in at the beginning with about a half cup more of water and don't add any salt. The ham and bacon will salt and flavor them really well. I purposely OVER cook them to make them mushy on purpose. After which add a little chicken stock and let them come back to a simmer. Viola! Ham and Lentil soup that taste amazingly like split pea and ham soup but better! I find it more rich in flavor than split peas.

I use lentils when canning stews. You can not can with flour, milk, or cornstarch so I use lentils, when they get mushy they act as s thickener that helps you give the stew a gravy consistency

Try using a splash of Tamari instead of salt and take a medium sized carrot and slice it (about 1/2 " thick) and cook. Then serve the lentils over the brown rice. Its delicious !

I love that stainless steel kitchen sink with all of the windows and that cool copper pipe pot & pan rack! And thanks for the tip about not putting any acidic things in with the lentils until they are soft, I didn't know that.
You can purchase those sinks at restaurant supply stores. My sister and I made a pot rack from galvanized, threaded steel pipe from Home Depot and spray painted it black. It turned out great. I believe the copper pipe would have to be soldered. I watched a youtube video about Tracy Porters Kitchen and they used the commercial stainless steel sink in their farmhouse to save money. It looked awesome.
So now I know why my Mom always added chopped tomato, onion and cilantro at the end, when the lentil were cooked, never at the beginning! Thanks man, Sopa de Lentejas down south here in Mexico is the BOMB! :)

This video was great! The other day, I looked up everywhere if I could use lentil puree for my tomato sauce because I've never heard of pureeing lentils! (I need to sneak lentils into my foods because I don't like the earthy flavor that much...will see if adding acidity will change the flavor for me). Thank you! I have eaten lentils since the 1970s and we’ve always soaked them. Originally it was to make them less farty! We would throw away the farty water, and then cook. Now I’m really old, I find it’s really important for easier digestion.
Also we were always told to not add salt at the start of cooking because it keeps the lentils or beans dry.
What are your thoughts on these points?

I am with you. I usually soak at least 30 minutes ahead, but I would rinse the lentils at a bare minimum.
just wanted to share a recipe for lentils. In India even split mung beans or split chick peas , pigeon peas are also referred to as Dal or lentils. this recipe calls for split chickpeas or Chana Dal as it is understood in Indian stores. Wash and soak 2 cups of this Dal for 2 hrs. then cook with just enough water to cook the Dal through but still hold its shape. drain all the excess water ( dont discard it though as it can be used for soups). once the dal is cooled blend it with a handful of freshly grated coconut, a cup of jaggery (sugarcane molasses) or ordinary sugar will also do. half a teaspoon of cardamom powder and a teaspoon of fennel powder. mix it well. keep aside. now knead some whole wheat flour into a soft dough with just flour, water and salt. 1 cup flour, half teaspoon salt and just enough water to knead a soft dough. make about 6 portions of this dough and roll them out to a 6 inch diameter. put the Dal stuffing in the middle of this and fold the sides of the dough over to completely cover the stuffing. now very gently roll this flat like a pizza base. heat a skillet or a pan and cook this flat stuffed bread - if you may call it - on the skillet on both sides till you see brown spots. smear some Ghee (clarified butter ) on the surface as you flip it over on the skillet. this takes just about a minute to cook on both sides. This is a delicious way to enjoy dals as a desert. In India we call it "Puran Poli" there are a lot of youtube videos on how to make Puran poli. This recipe is by far the easiest. by the way the Rice and lentils recipe is the best food when you are down with cold or fever. In India we call it Khichdi. It is the absolute comfort food. Easy to digest when your system is down and still gives a lot of strength to recover fast from the sickness.

In Slovak cuisine, when cooking lentils, beans, and peas, we don't add salt but a small peeled onion and 1-2 cloves garlic. For beans plus 2 bay leaves. When done, add a soup spoon of butter, salt. When cooler, add yoghurt or sour cream (peas: sprinkle with fried onions or bacon). Pure heaven. Serve with wieners or kielbasa.

You are right about not missing meat if you eat lentils but the need to combine foods to get a complete protein has been proven to be false. We retain nutrients and combine them at a later time. No need to concern oneself with doing it meal by meal. Our bodies are truly amazing.

Another way to cook them is to soak overnight, rinse, toss them into a rice cooker or covered pot, add enough cold water to come up even with the lentils and cook. Takes about 15 minutes in a rice cooker. This works great, too, if you add millet at the beginning.
That sounds like a great method. But lentils only take 15 minutes stovetop method. Saves you about 9 hours ;)

@@qualqui No Joe. Rinsing lentils or better - soaking them and then rinsing before cooking removes some of the dirt and anti-nutrients such as physic acid. It's rice that can lose nutrients while rinsing, although more so with white rice.
Yeah, I was wondering why he didn't rinse them. My mom and my grandmother always rinsed them before cooking. You definitely want to sift through them for hard debris like little pebbles and such which can be in there.

Just cooked 250g red lentils to use up my fridge and pantry leftovers before the new food arrives.
Sauteed 4 onions and garlic in butter and olive oil. Added garlic, pink salt and a chicken cube.
Boiled the lentils separately to avoid the froth getting into my soup.
Added both together with filtered water. Stripped the leftovers from the chicken carcass and simmered. I threw in a few frozen peas for colour and a few diced potatoes.
Have to say it was both delicious and filling.
I would rather have had celery and carrots but I managed a healthy meal without wasting a scrap of food
