Look great mate. Just s tip for your vice. Take the steel face jaws off and replace with hard wood. That way you wont have to use woodern blocks or leather strips to protect your work.
Even with wood faces, it is best to cover them with leather but
you glue it on, so you don't need to keep fooling with it. 😁✌🖖

That looks great Caleb. I think that is a good idea to leave it a little chunky and set the neck to it. Not only will it help keep the top flat, but you will have some bridge to shave off if need be in the future.
