Iconic strawberry jelly slice | slice recipe | Aussie girl can cook

  • GREAT FOR AUSTRALIA DAY make one yellow and one green then mix the slices once youve cut them looks great. this strawberry jelly slice is another old school family favorite so tasty its awesome no bake either. great to make with the kids lots of fun. recipe below
    lammington tin approx 18cm x 28cm with baking paper
    slice base
    250g marie biscuits or sweet biscuits
    175g butter melted
    sprinkle cinnamon
    filling
    395g can condensed milk sweetened
    1/4 cup lemon juice
    3/4 cup boiling water
    2 tea sp gelatine
    top layer
    box strawberry jelly crystals use 150 ml less than on directions
    store in fridge..this also freezes very well if you freeze in slices can take out as you need it should eat same day as defrosting.

    When I was a kid, in the 50's, there was cake shop that I passed to and from School, they would have Jelly slices in the window....On the very rare occasion I had enough money to buy one it was the biggest treat. I still remember looking at them in the window mouth watering. Thank you for the memory...Young lady!!!

    That does look good AG. You always have great recipes. I had a cookbook called Heratige Australian cookbook something like that. It had a lot of these types of recipes, but a heap of pictures of Australia. For anyone starting on the path of cooking, it was the first step, it explained so many things. You really can cook, spot on every time. Thanks AG.

    i had another go at this turned out much better than i thought it would only made it yesterday and theres only half left . i did run out of jelly on 2 of the corners so musnt of put enough in

      @@aussiegirlcancook nope it didnt work the 1st and second layer came out ok but the jelly didnt stay on properly it did set but half the jelly went to the bottom . made the base all soggy . my 16 year old said not to throw it out he will still eat it . was i supposed to put gelatin in the jelly? i used a slice pan as well as i didnt have your size tray

    First of all let me say it looks awesome, I'm going to make it for Christmas, just one question did you grease your baking paper.

      no you dont need to just the tray to hold the paper in becouse the base of the slice has butter in it it will not stick to the paper when you take it out :)

    I've made this 3 times now and still haven't perfected it. Never use the leaves. Uhh.
    Oh and Marie biscuits just ain't what they used to be. Milk Coffee biscuits are the go. They are an Arnotts brand same as Arrowroot, would be another great substitute. DO NOT BUY MARIE BISCUITS, sorry Arnotts but they have changed for the worst.
    That's just my little input and insight since baking with these biscuits after a long break. Hope it's okay to pitch in?

      Make then with Milk Coffee biscuits only because Marie biscuits have changed since I last tried slices etc... I didn't mean anything ill fated. Just if in Australia you'll find them to be a better texture with melted margarine. Good luck 🎉

      PLUS mix both margarine into the 175 amount. Sorry I'm just thinking of dentures etc etc.

    Condensed milk and lemon will thicken and go solid without the gelatine is there a reason u add the gelatine to the condensed milk?

      yes to make the condensed milk more jelly like and it helps to keep the jelly from sliding of the top as well
